Very Chocolate Ice Cream, Kids’ Friendly Edition

- ½ cup Dutch-process cocoa
- 1 cup sugar
- 3 tbsp cornstarch
- ¼ tsp salt
- 1 cup cold water
- 1 tbsp vanilla, or 1 tbsp espresso powder
- 2 cups whole milk
- 1 cup semi-sweet or bitter-sweet chocolate or chocolate chips
- ¼ cup alcohol (completely optional)
- In a saucepan mix the following: cocoa, sugar, cornstarch and salt.
- Add the water and stir until it is smooth.
- Add the vanilla.
- Whisk in the milk.
- Bring the mixture to a boil over medium heat. Whisk constantly as you don’t want anything to stick at the bottom of the pan.
- Remove the pan from heat and add the chocolate chunks.
- Stir until it is melted completely and incorporated to the mix.
- Pour the mixture to a glass bowl and place a plastic wrap on top so as not to form a skin.
- Refrigerate until it is completely chilled; overnight it is even better.
- Next day pour the batter into your ice cream maker and make it ice cream according to the manufacturer’s instructions.
- When it starts to thicken you can add the alcohol if you want it.
- We add alcohol so as to prevent the ice cream from becoming rock hard.
- I didn’t do it since it was going to be consumed by a child.
