Fall is all about apples and pumpkins isn’t it? From yesterday we officially entered autumn my friends here. Temperatures fell to 20’s C and we had a brief rain too. The weather has cooled down and demand for pumpkin was imperative for me. I needed to make something with pumpkin. Last year I made sweet pumpkin pie, but this year I wanted something savory to feature my Sunday table.

So, when I saw this recipe at Taste, something clicked to me and I thought that that was the one.

We all loved it. It was the first time I used oyster sauce and it was delicious! I made a couple of changes to fit to our family’s taste and there it was! A sweet and savory vegetarian dish of Asian origin, which was the perfect addition to our table.

As I was going through my site recipes, I realized that not many of them are vegetarian which is totally ridiculous, because as a family we consume many vegetables, only they are the same all the time. This dish was a good chance to change this and include yet another beautiful meal in my vegetarian category.

I will definitely make it again and this time I will try to make it with chicken to satisfy the carnivore site of me.

Do try it; it is so good and different from the usual stuff. ;-)

 

Pumpkin and Zucchini Kecap Manis Stir-fry

Ingredients

1kg/2.2 lb pumpkin, peeled, cut into 3cm/ 1.1 inch pieces

1/3 cup kecap manis (sweet soy sauce)

2 tbsp oyster sauce

1/2 tsp ground green and pink pepper

2 tbsp sesame oil

1 onion, cut into thin wedges

2 garlic cloves, thinly sliced

2 zucchini, halved lengthways, sliced diagonally

1 medium eggplant, cut into 2cm/1 inch pieces

Instructions

Put pumpkin on a microwave-safe bowl with 2 tbsp of water.

Cover with plastic wrap and make small holes with a fork to let the steam escape.

Microwave on high (100%) for 10 minutes or until just tender.

Drain it.

Whisk kecap manis, oyster sauce and pepper in a small bowl.

Heat a wok over high heat.

Add 1 tbsp of the oil.

Add the onion and the garlic.

Stir-fry for 2 minutes or until softened.

Add the remaining oil.

Add the zucchini and eggplant.

Stir-fry for 4 to 5 minutes or until they become tender.

Add the pumpkin.

Stir-fry for 2 minutes.

Add sauce mixture.

Stir-fry for 1 to 2 minutes or until heated through.

Ingredients/ Συστατικά
  • 1 κιλό κολοκύθα κομμένη σε κύβους 3cm (υπάρχει έτοιμη κομμένη άψητη στα σούπερ μάρκετ)
  • ⅓ φλ. kecap manis (γλυκιά σάλτσα σόγιας, υπάρχει στα περισσότερα σούπερ μάρκετ, αν δεν βρείτε βάλτε σάλτσα σόγιας με 2 κ.σ. καφέ ζάχαρη)
  • 2 κ.σ. σάλτσα στρειδιών
  • ½ κ.γ. πράσινο και ροζ πιπέρι
  • 2 κ.σ. σησαμέλαιο
  • 1 κρεμμύδι, κομμένο σε λεπτές φέτες
  • 2 σκελίδες σκόρδο, τριμμένο
  • 2 κολοκυθάκια, κομμένα στη μέση κατά μήκος και μετά κομμένα σε χοντρές φέτες
  • 1 μέτρια μελιτζάνα, κομμένη σε κύβους 2cm

Instructions/ Εκτέλεση
  1. Βάλτε την κολοκύθα σε ένα γυάλινο μπολ στο φόύρνο μικροκυμάτων με 2 κουταλιές της σούπας νερό.
  2. Σκεπάστε με πλαστική μεμβράνη και κάντε πάνω στη μεμβράνη μικρές τρύπες με ένα πιρούνι για να φεύγει ο ατμός.
  3. Βάλτε το φούρνο μικροκυμάτων στην ψηλή θερμοκρασία, για 10 λεπτά ή μέχρι να μαλακώσει η κολοκύθα.
  4. Καλό είναι στα 5 λεπτά να ελέγξουμε γαι να είμαστε σίγουροι.
  5. Σουρώστε.
  6. Ανακατέψτε τη σάλτσα kecap manis, τη σάλτσα στρειδιών και το πιπέρι σε ένα μικρό μπολ.
  7. Βάλτε σε δυνατή φωτιά να ζεσταίνεται ένα γουόκ ή ένα βαθύ αντικολλητικό τηγάνι.
  8. Προσθέστε 1 κουταλιά της σούπας του σησαμέλαιο.
  9. Προσθέστε το κρεμμύδι και το σκόρδο.
  10. Σωτάρετε για 2 λεπτά ή μέχρι να μαλακώσουν.
  11. Προσθέστε το υπόλοιπο λάδι.
  12. Προσθέστε το κολοκύθι και τη μελιτζάνα.
  13. Σωτάρετε για 4 έως 5 λεπτά ή μέχρι να μαλακώσουν.
  14. Ρίξτε την κολοκύθα.
  15. Σωτάρετε για 2 λεπτά.
  16. Προσθέστε τις σάλτσες.
  17. Συνεχίστε το σωτάρισμα για 1 ως 2 λεπτά ή μέχρι όλα να έρθουν στην ίδια θερμοκρασία.

    Lovely Recipe Katerina, I love Asian flavors, this is a keeper.
    It’s funny, I was thinking the same thing about my blog and the vegetarian recipes. They are few although as Greeks we have a wide variety of vegetarian dishes.
