FLT Sandwich
This month’s theme for World on a Plate was Bento for back to school meals. Grasping this opportunity, I want to tell how kids in Greece and particularly in elementary school eat their snack at school.
Elementary school starts between 8:00 and 8:30 every day and finishes between 13:30 and 14:00. In private schools kids have the choice to stay until 16:00 to study. This is optional and by no means necessary.
In my son’s school they have one break from 11:00 to 11:30. During this break kids either choose to eat from the school canteen or they bring a snack from their home. During the break kids take the snack outside in the backyard and eat it as they play. This means that the snack has to be something that can be hold in hand and allow the child to play at the same time. Children who stay until 16:00 have another break at 14:00 during which, they go to a cafeteria and eat their lunch either brought from home or provided by school.
My son leaves at 14:00 and returns back home. Thus, he only has to have a snack with him to eat during the first break. So, every day I have to prepare something that can be carried during the break and not make a mess with it.
Sometimes this may be sweet and others savory. I came up with this sandwich as an opposite to the BLT one. I love bacon and I use it sometimes, but I believe feta cheese is a healthier choice, plus it is a Greek sandwich for crying out loud!
Anyway, as I was saying I have to always find new things to give him otherwise, he brings it back home intact and he is starved.
It is simple, it is nutritious, it is very tasty and it is something you can prepare in a minute. This one pictured above and below I had the pleasure to eat it myself!

Note: I have to thank my son for letting me lend his books and stationary in order to photograph the sandwich! He asked that he should be given credit for this and this is exactly what i am doing!
FLT Sandwich
2 slices of bread
3 tomato slices
2 pieces of feta cheese about 40 gr. each
4 tbsp of olive oil
Lettuce for garnish
For the Mayo Dressing
2 tbsp mayonnaise
1 tbsp cider vinegar
¼ tsp dried oregano
¼ tsp dried basil
¼ tsp sugar
Instructions
For the Mayo Dressing
Mix everything in a nonreactive bowl and refrigerate for at least an hour, maximum two hours.
Take the two slices of bread.
Brush them with the olive oil on both sides.
Put them on a skillet and brown them on both sides.
Do the same with the tomatoes and the feta cheese.
Take the first slice of bread and put the feta cheese.
Above it place the tomatoes and lettuce and on top pour a little bit from the mayo sauce.

En France, il y a une pause de 10h20 à 10h40 que nous appelons récréation. Après il y a une pause de 12h30 à 14h. Les enfants mangent à la cantine ou rentrent chez eux mais ils ne peuvent pas ramener à manger sur place. Seuls les adultes ont ce choix.
Je pourrai donc faire ce délicieux sandwich pour moi-même.

Very creative sandwich, Katerina. I’d love it for MY lunch! It must be difficult to think up sandwiches that are healthy, portable AND something your son will eat. I’d probably end up with pb&j every day out of pure laziness.
I’m crazy about this sandwich! I love the FLT idea…and I bet it would be amazing with my chevre too! I’m dying to make some feta from scratch! Until then..I’ll buy some and make this incredible sandwich!

I can’t tell you how happy I am that you shared not only your son’s delicious looking lunch with us but also a typical school day in Greece. I would imagine it’s necessary for kids to eat a healthy breakfast too. It sure sounds like a long day. Please thank you son for us and thank YOU for sharing…
