I made this meal during Holy Week since at that specific period our family abstains from consuming meat. At the beginning, I thought that it wasn’t worth posting about it, as it is was very easy and ordinary, but my husband insisted on it, since he thought it was extremely tasty. So, and from the moment that he is my technical support for this blog, I don’t think I should go against him, what do you think? Probably, not! Plus the fact that, indeed, it was really good and for those of you who do not eat meat, it is a very close alternative. I have no step by step photos, but it is so easy that you don’t need them!

For us Greek Orthodox it is our Easter weekend so I am wishing to all my Greek blog friends “Χριστός Ανέστη” which means in English “Christ has resurrected”!

 

Mushrooms Ragú

Ingredients

400 gr. white button mushrooms

400 gr. pleurotus mushrooms

1 onion chopped or sliced or cubed (any way you like it)

1 cup Marsala wine

1 cup vegetable stock

5 tbsp tomato juice

1 tbsp sugar

1 tsp dried basil

1 tsp dried oregano

1 tsp dried thyme

½ tsp Italian herbs

1 tsp garlic powder

3 tbsp olive oil

2 tsp corn flour dissolved in the ¼ cup of the Marsala wine

A bunch of fresh parsley, chopped

Instructions

In a pot pour the olive oil and sauté the onion until transparent.

Add the mushrooms and sauté for couple of minutes

Pour the Marsala wine but ¼ of the cup and let boil in medium heat until almost half of the wine quantity is evaporated.

Add the stock and continue to let it boil for 10 minutes.

Add the tomato juice and all the herbs and let boil for another 15 minutes.

In the end pour the ¼ cup of the Marsala wine in which you will have dissolved the 2 tsp of the corn flour.

Stir until the sauce thickens for couple of minutes.

Remove from stove and serve.

Ingredients/ Συστατικά
  • 400 γρ. λευκά μανιτάρια
  • 400 γρ. μανιτάρια πλευρώτους
  • 1 κρεμμύδι ψιλοκομμένο ή σε φέτες ή κύβους (με οποιονδήποτε τρόπο σας αρέσει)
  • 1 φλ. κρασί Μαρσάλα ή μαυροδάφνη
  • 1 φλ. ζωμό λαχανικών
  • 5 κ.σ. χυμό ντομάτας
  • 1 κ.σ. ζάχαρη
  • 1 κ.γ. ξερό βασιλικό
  • 1 κ.γ. ξερή ρίγανη
  • 1 κ.γ. ξερό θυμάρι
  • ½ κ.γ. Ιταλικά βότανα
  • 1 κ.γ. σκόνη σκόρδου
  • 3 κ.σ. ελαιόλαδο
  • 2 κ.γ. κορν φλάουρ διαλυμένο στο ¼ φλ. του κρασιού Marsala ή μαυροδάφνης
  • Ένα μάτσο φρέσκο μαϊντανό, ψιλοκομμένο

Instructions/ Εκτέλεση
  1. Σε μια κατσαρόλα ρίξτε το ελαιόλαδο και σοτάρετε το κρεμμύδι μέχρι να γίνει διαφανές.
  2. Προσθέστε τα μανιτάρια και σοτάρετε για μερικά λεπτά
  3. Ρίξτε το κρασί Marsala ή μαυροδάφνη εκτός του ¼ του φλυτζανιού και αφήστε να βράσουν σε χαμηλή φωτιά μέχρι να εξατμιστεί η μισή ποσότητα του κρασιού.
  4. Ρίξτε το ζωμό και αφήστε τα να βράσουν για 10 λεπτά.
  5. Προσθέστε το χυμό ντομάτας και τα μυρωδικά και αφήστε να βράσουν για άλλα 15 λεπτά.
  6. Στο τέλος ρίξτε το ¼ φλιτζάνι του κρασιού Marsala ή μαυροδάφνης, στο οποίο θα έχετε διαλύσει τα 2 κουταλάκια κορν φλάουρ.
  7. Ανακατέψτε μέχρι να δέσει η σάλτσα για μερικά λεπτά.
  8. Αφαιρέστε από το φούρνο και σερβίρετε.

    You had me on pleurotus mushroom so I Googled it and found it is called oyster mushroom. Yep, I can get those just about anywhere.

  9. I’m a big mushroom fan and try to put it in many dishes – but I rarely cook just mushroom! This one looks really good with Marsala wine.
