Creamy Chicken with Leeks and Shiitake Mushrooms

Ingredients/ Συστατικά
  • 4 chicken breasts, boneless, skinless cut lengthwise to make 8 thinner ones
  • 2 leeks, sliced
  • 3 carrots, thickly sliced and boiled until soft
  • 30 gr. dried shiitake mushrooms
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup chicken stock
  • ½ cup wine
  • 200 ml heavy cream
  • 1 garlic clove, minced
  • Salt, pepper
  • Olive oil and butter
  • Flour to cover the breasts
Instructions/ Εκτέλεση
  1. Boil some water and pour it in a bowl.
  2. Add the shiitake and let them stay for 15 minutes.
  3. Flour slightly the chicken breasts, removing any excess quantity.
  4. In a heavy pan add some olive oil and butter (couple of tbsp. of each) and in medium/high heat sauté the breasts until are almost done and have taken a nice golden color.
  5. Remove and keep them warm.
  6. In the same pan add some olive oil and butter (couple of tbsp. of each) and sauté the leeks, shiitake (after you drain them from water), garlic and peppers until they are translucent and somewhat soft.
  7. Pour the chicken stock, salt and pepper and let them boil in medium heat until the stock reduces to half.
  8. Add the wine and the chicken breasts and let them cooked in medium/low heat for about 10 minutes.
  9. Add the heavy cream and boiled carrots and continue cooking for another five minutes.
  10. If you want the sauce thick then you can thicken it with 1 tsp of corn starch dissolved in 1 tsp of water.
  11. Serve with rice or pasta.
