Very Chocolate Cake

- ½ cup (80 gr.) packed all purpose flour
- ½ cup (90 gr.) packed self-rising flour
- 2 tsp baking powder
- 120 gr. / 4 oz. unsalted butter, softened at room temperature
- ¾ cup granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 1 cup whole milk
- 200 gr. / 7 oz. chocolate 60% cocoa melted and cooled
- 200 gr. / 7 oz. chocolate 60% cocoa
- 1 cup heavy cream
- Preheat oven to 175C / 350F.
- Butter a round pan 23cm / 9 in.
- Sift together the flour and baking powder.
- Set aside.
- In the bowl of a stand mixer, beat the butter and sugar until fluffy.
- Add the egg and continue beating for a minute and then add the vanilla extract and beat again for a minute or two.
- On low speed add half of the flour mixture and beat until incorporated.
- Then, add the milk and mix until just blended.
- Add the remaining flour and mix again only until it is incorporated.
- Blend in the melted chocolate.
- Pour the batter to thepan and bake for about 25 to 30 minutes or until the knife comes out clean.
- Put aside to cool while making the ganache.
- Warm the heavy cream until it starts boiling.
- Remove from stove and pour it on the chocolate.
- Let stand for a minute and then whisk until chocolate is completely melted.
- Take the cake place it in a rack having underneath it parchment paper and pour the chocolate on top of the cooled cake.
- Let the ganache stabilize and serve.
