Clean Monday Lagana

- 935 gr / 33 oz. all-purpose flour
- 1 tbsp + 1 tsp salt
- 2 tsp dry yeast
- 1 ½ tsp sugar
- 1 tsp anise (optional)
- 50 gr. / 2 oz. tahini
- 680 gr. / 24 oz. lukewarm water
- Sesame for sprinkling
- The Previous Day
- Mix all dry ingredients in a bowl.
- In the bowl of your mixer pour the water and the tahini.
- Mix with the hook until tahini is dissolved in the water.
- Throw the dry ingredients into the wet ones and mix for about three to four minutes.
- Take a glass bowl, oil it with olive oil and place the dough there.
- Let it rest at room temperature for two hours.
- After these two hours, put the bowl in the fridge covered with cling film overnight.
- Next day take an amount of about 400 gr. / 14.5 oz. from the dough.
- Let the rest of the dough in the fridge and work with the amount you extracted.
- Take a pan and put parchment paper on it.
- Work with dough, flatten it inside the pan and on the parchment paper just like in the pictures.
- This particular quantity makes a bread of 20cm X 25cm / 8 in. X 10 in.
- Let the bread stay at room temperature for 75 minutes.
- Preheat oven at 200° C / 400° F.
- With your fingertip make small scattered holes on the bread.
- Brush the top of the bread with warm water and sprinkle with sesame seeds.
- Put in the oven and bake for 20 minutes or until the bread has taken a nice golden color.
- Remove, let it stay on a rack to cool and serve.
