Clean Monday Lagana

Ingredients/ Συστατικά
  • 935 gr / 33 oz. all-purpose flour
  • 1 tbsp + 1 tsp salt
  • 2 tsp dry yeast
  • 1 ½ tsp sugar
  • 1 tsp anise (optional)
  • 50 gr. / 2 oz. tahini
  • 680 gr. / 24 oz. lukewarm water
  • Sesame for sprinkling

  1. The Previous Day
  2. Mix all dry ingredients in a bowl.
  3. In the bowl of your mixer pour the water and the tahini.
  4. Mix with the hook until tahini is dissolved in the water.
  5. Throw the dry ingredients into the wet ones and mix for about three to four minutes.
  6. Take a glass bowl, oil it with olive oil and place the dough there.
  7. Let it rest at room temperature for two hours.
  8. After these two hours, put the bowl in the fridge covered with cling film overnight.
  9. Next day take an amount of about 400 gr. / 14.5 oz. from the dough.
  10. Let the rest of the dough in the fridge and work with the amount you extracted.
  11. Take a pan and put parchment paper on it.
  12. Work with dough, flatten it inside the pan and on the parchment paper just like in the pictures.
  13. This particular quantity makes a bread of 20cm X 25cm / 8 in. X 10 in.
  14. Let the bread stay at room temperature for 75 minutes.
  15. Preheat oven at 200° C / 400° F.
  16. With your fingertip make small scattered holes on the bread.
  17. Brush the top of the bread with warm water and sprinkle with sesame seeds.
  18. Put in the oven and bake for 20 minutes or until the bread has taken a nice golden color.
  19. Remove, let it stay on a rack to cool and serve.
