Green Salad with Pomegranate Seeds and Vinaigrette

- 4 cremini mushrooms, sliced
- 4 leaves of salad
- 2 handfuls of spinach
- 2 handfuls of rucola
- ½ cup of pomegranate seeds
- ½ tsp Herbes de Provence
- 2 tbsp butter
- ¼ cup red wine
- ¼ tsp garlic powder
- ¼ tsp onion powder
- Salt and pepper
- 4 tbsp olive oil
- 1 tbsp red wine vinegar
- 3 tbsp pomegranate juice
- 2 tbsp honey
- Place all ingredients in a glass bowl and microwave in high for 30 seconds.
- Put aside and let it cool, while preparing the salad.
- Add the margarine to a skillet in medium heat.
- Throw the mushrooms, herbs and spices.
- Pour the wine and let them cook until all liquids are absorbed.
- Remove from heat and put them aside.
- Cut the salad leaves and arrange them along with the rest of the greens in a deep bowl.
- Add the pomegranate seeds.
- Arrange the mushrooms on top of the seeds and greens.
- Pour about four tbsp. of the vinaigrette and mix well.
