In many of my posts I have described several of Hercules’ Labors in order to be forgiven for the deaths of his wife and children after Hera’s spell that made him lose his mind. When Hercules completed the cycle of the labors he planted an olive tree outside Hera’s temple in ancient Olympia.

Olympia was the place the Olympic games took place every four years. Athletes from several Greek cities took part. During those games, all hostilities and wars stopped and people were free to participate and watch. No women were allowed to the games and athletes were competing nude. The winner’s prize was a wreath made of olive leaves called “Kótinos”. It was a great honor to participate and win in these games. When the winner returned to his homeland, people demolished the walls that protected the city in order for the him to enter with great honor.

Olive tree is connected to many myths and stories throughout the ancient Greek history and that shows just how essential an element was for their diet. Olive oil and olives are important parts of our nutrition even today. To give you an example apart from small bottles of olive oil sold in the s/m, there are also vessels of 4 lt. As a matter of fact, I, too, have in my home such a container. We consume a lot of olive oil and it is not as expensive as in US. For example, a good extra virgin olive oil costs about 7 to 8 euros per liter.

Olives also are high in our consumption and there are several types throughout Greece that have distinctive characteristics such as the size, the color and the taste. The past few years olive paste has made its appearance in shelves and that made consumption of olives easier and higher.

I had a small vase of olive paste in my pantry and was wondering what to do with it and so I decided to use it in my cooking. I made this delicious chicken meal which is packed with flavors from the Greek soil. It is very easy to make and doesn’t take too much time to cook. It took me about an hour from start to finish and the result was delicious. A totally family meal with the unique flavor of olive.

Ingredients/ Συστατικά
  • 4 chicken breasts, boneless, skinless cut lengthwise in thin slices
  • 1 yellow pepper, sliced
  • 2 onions, sliced
  • 250 gr. / 9 oz. mushrooms, sliced
  • 5 zucchinis, sliced in thick slices
  • Salt, pepper
  • ¼ cup + ½ cup dry red wine
  • ½ cup chicken stock
  • 100 gr. / 4 oz. tomato juice
  • 4 tsp olive paste
  • 1 tsp from each of the following: dried thyme, basil, oregano
  • ¼ cup olive oil plus some more for sautéing
Instructions/ Εκτέλεση
  1. Preheat oven to 325° C / 435°F.
  2. In a skillet pour couple of tbsp. of olive oil and sauté first the onions, then add the peppers and finally the mushrooms until they become soft.
  3. Remove and set aside.
  4. Add the zucchinis and sauté until they take a nice golden color.
  5. Remove and set aside.
  6. In the same skillet pour another couple of tbsp. of olive oil and sauté in high heat the chicken pieces after you have salted and peppered them until semi done.
  7. Remove and set aside.
  8. In this same skillet pour the ¼ wine and scrape it.
  9. Take a deep pan and throw the vegetables.
  10. Add on top of them the chicken pieces.
  11. Salt and pepper them and add all the dried herbs.
  12. Scatter the 4 tsp of the olive paste all over the pan.
  13. Pour the tomato juice, the wine with the scrapes from the skillet, the ½ cup of stock, the other ½ cup of the red wine and the olive oil.
  14. Bake in a preheated oven for 20 minutes.
  15. Turn your oven to broiler and broil for another 3 to five minutes until everything has taken a nice golden color.
  16. Remove from the oven and drain all the juices.
  17. Put them in a deep pot in medium/high heat and add 1 hipping tbsp. of cornstarch dissolved in 1 tbsp of water to thicken the sauce.
  18. Pour the sauce on top and serve with rice, potatoes or pasta.

Ingredients/ Συστατικά
  • 4 στήθη κοτόπουλου, χωρίς κόκαλα, και πέτσα κομμένα κατά μήκος σε λεπτές φέτες
  • 1 κίτρινη πιπεριά, σε φέτες
  • 2 κρεμμύδια, κομμένα σε φέτες
  • 250 γρ. μανιτάρια, κομμένα σε φέτες
  • 5 κολοκυθάκια κομμένα σε χοντρές φέτες
  • Αλάτι, πιπέρι
  • ¼ φλ. + ½ φλ. ξηρό κόκκινο κρασί
  • ½ φλ. ζωμό κοτοπούλου
  • 100 γρ. χυμό ντομάτας
  • 4 κ.γ. πάστα ελιάς
  • 1 κ.γ. από το καθένα από τα ακόλουθα: ξερό θυμάρι, βασιλικό, ρίγανη
  • ¼ φλ. ελαιόλαδο συν λίγο παραπάνω για το σοτάρισμα
Instructions/ Εκτέλεση
  1. Προθερμαίνετε το φούρνο στους 325° C.
  2. Σε ένα τηγάνι ρίξτε δυο κουταλιές ελαιόλαδο και σοτάρετε πρώτα τα κρεμμύδια και, στη συνέχεια, προσθέστε τις πιπεριές και τέλος τα μανιτάρια μέχρι να μαλακώσουν.
  3. Αφαιρέστε και βάλτε στην άκρη.
  4. Προσθέστε τα κολοκυθάκια και σοτάρετε μέχρι να πάρουν ένα ωραίο χρυσαφί χρώμα.
  5. Αφαιρέστε και βάλτε στην άκρη.
  6. Στο ίδιο τηγάνι ρίξτε άλλες δύο κουταλιές ελαιόλαδο και σοτάρετε σε δυνατή φωτιά τα κομμάτια κοτόπουλου αφού τα έχετε αλατίσει και πιπερώσει μέχρι να πάρουν χρώμα.
  7. Αφαιρέστε και βάλτε στην άκρη.
  8. Στο ίδιο τηγάνι ρίξτε το ¼ φλ. κρασί και ντεγλασάρετε.
  9. Πάρτε ένα βαθύ ταψί ή γάστρα και ρίξτε τα λαχανικά.
  10. Προσθέστε επάνω τους τα κομμάτια κοτόπουλου.
  11. Αλατοπιπερώστε και προσθέστε τα ξερά μυρωδικά.
  12. Μοιράστε τα 4 κ.γ. από την πάστα ελιάς σε όλο το ταψί.
  13. Ρίξτε το χυμό ντομάτας, το κρασί που ντεγλασάρατε το τηγάνι, το ½ φλιτζάνι του ζωμού, το άλλο ½ φλ. από το κόκκινο κρασί και το ελαιόλαδο.
  14. Ψήστε σε προθερμασμένο φούρνο για 20 λεπτά.
  15. Γυρίστε το φούρνο στο γκριλ και ψήστε για άλλα 3 έως 5 λεπτά μέχρι να πάρει ένα ωραίο χρυσαφί χρώμα.
  16. Αφαιρέστε από το φούρνο και στραγγίστε όλο το ζουμί.
  17. Βάλτε το σε μια βαθιά κατσαρόλα και σε μέτρια προς ψηλή θερμοκρασία προσθέστε 1 γεμάτη κουταλιά σούπας κορνφλάουρ διαλυμένο σε 1 κουταλιά της σούπας νερό για να δέσει η σάλτσα.
  18. Ρίξτε τη σάλτσα από πάνω και σερβίρετε με ρύζι, πατάτες ή μακαρόνια.

    This is A LOT different from the country “fried” steak I grew up eating. You recipe is so much healthier and with some great flavors that we love in this house. Bobby and I are both olive lovers, but I’ve never used olive paste. Can I just smash up some olives and make my own paste? Fantastic looking meal!

  7. Loving this dreamy chicken with the sauce and the veggies! However, still not able to get the ought out of mind is that the olympics were held in the nude all fighting ceased… and women were not allowed into watch the competitions. That is very interesting.

    What a coincidence! I bought two bottles of Greek oil in an organic shop! I love Greek olive oil and recently have been buying only Greek (luckily it’s the choice I have!).
    This chicken looks fantastic! I love the way you cook with wine! Always so generous and, what always surprises me, there’s always something different from the Italian or French cooking with wine…. Beautiful photographs!

    I’m betting the olive paste gives a little more olive flavor than oil. Which works so well with chicken and vegetables!
