Once upon a time in the exotic land of Far East, Ali Baba, a poor logger, discovered a cave that was filled with gold and precious stones, a treasure that was stolen and gathered there by the 40 thieves. All he had to do was to shout at the cave’s door: “Open Sesame”. And just like the sesame nut opens to let out the seed, the secret door of the cave opened and all these reaches appeared in front of him.

Tahini has a special place in many ancient civilizations. Indians considered it the king of the seeds. Assyrian kings were drinking sesame wine before they rushed to battle while commoners considered it equal to silver in their transactions. Chinese and Japanese used it in nostrums and used its oil in their cooking. Hippocrates and Galinos used it as medicine while in ancient Greek marriages they offered a mixture of tahini and honey that resembles halva.

Tahini belongs to super foods because it contains numerous ingredients that help our body. Vitamins from B complexion, magnesium, zinc, phosphorus and unsaturated fats are only few of the contents of tahini. It also helps in osteoporosis since it contains calcium that is necessary for healthy bones. Sulphur amino acids necessary for our kidneys and liver are also part of the long list of nutritious elements tahini contains.

Tahini has more vitamin E than the olive oil, element that protects our body from cancer heart diseases, cataract, diabetes, Alzheimer or Parkinson. It has absolutely zero cholesterol and form a perfect addition to all diets especially those of vegans.

If we want to compare it with peanut butter it seems that tahini has more fibers and calcium and less sugar and saturated fats.

We are currently running the Easter lent period here in Greece and some of my friends are following this. They are asking me for ideas particularly on sweets, since there aren’t so many options in this category. I made these cookies completely vegan and they were delicious. Even if you are not vegan or fasting, I totally recommend them to you as they are out of the ordinary and so, so indulging.

Vegan Chocolate Cookies with Tahini

  • 1 cup coconut oil
  • 1 cup honey
  • ½ tsp vanilla extract
  • 3 ½ cups of all purpose flour
  • ½ cup cocoa
  • Tahini for filling them
Instructions/ Εκτέλεση
  1. Preheat oven to 175°C / 345°F.
  2. In your stand mixer’s bowl pour the oil, honey and vanilla and mix to incorporate.
  3. In another bowl mix the dry ingredients.
  4. Throw the dry ingredients to the liquids and with the hook mix until crumbled dough is formed.
  5. Remove and knead to make a tough dough.
  6. Take a pan and cover it with parchment paper.
  7. Take another piece of parchment paper and put on top of it a big piece of the dough the size of a tennis ball.
  8. Cover with another parchment paper and roll with a pinning roll until the dough becomes a large circle with 3 mm / 0.1 in. thickness.
  9. Do the same for all the dough.
  10. Take a round mold, mine was 5cm / 2 in. and cut the dough in circles.
  11. With a spatula transfer them to the pan and when you finish them all, cut with a smaller mold half of them in the center.
  12. Bake for 12 to 15 minutes.
  13. Remove and let them cool.
  14. Take ½ tsp of the tahini paste and spread it on top of the uncut cookies.
  15. Place the cookies with the hole on top of the other ones and they are ready to be consumed.

Νηστίσιμα Μπισκότα Σοκολάτας με Ταχίνι

Ingredients/ Συστατικά
  • 1 φλ. λάδι καρύδας
  • 1 φλ. μέλι
  • ½ κ.γ. εκχύλισμα βανίλιας ή μία βανιλίνη
  • 3 ½ φλ. αλεύρι για όλες τις χρήσεις
  • ½ φλ. κακάο
  • Ταχίνι για τη γέμιση
Instructions/ Εκτέλεση
  1. Προθερμαίνετε το φούρνο στους 175°C.
  2. Στον κάδο του μίξερ ρίχνουμε το λάδι, το μέλι και τη βανίλια και ανακατεύουμε να ενσωματωθούν.
  3. Σε ένα άλλο μπολ ανακατεύουμε τα στερεά συστατικά.
  4. Ρίχνουμε τα στερεά υλικά στα υγρά και με το γάντζο ανακατεύουμε μέχρι να γίνει μια ζύμη σαν τρίμματα.
  5. Βγάζουμε από το μίξερ και ζυμώνουμε ώστε να γίνει μια σκληρή ζύμη.
  6. Παίρνουμε ένα ταψί και το σκεπάζουμε με αντικολλητικό χαρτί.
  7. Παίρνουμε ένα άλλο κομμάτι λαδόκολλα και βάζουμε από πάνω ένα μεγάλο κομμάτι στο μέγεθος μιας μπάλας του τένις της ζύμης.
  8. Σκεπάζουμε με ένα άλλο αντικολλητικό χαρτί και ανοίγουμε ένα φύλλο με πάχος 3 mm
  9. Κάνουμε το ίδιο για όλη τη ζύμη.
  10. Με μια στρογγυλή κουπ πατ, κόβουμε στρογγυλά κομμάτια με 5cm διάμετρο.
  11. Με μια σπάτουλα τα μεταφέρουμε στο ταψί.
  12. Όταν τα βάλουμε όλα στο ταψί, από τα μισά κόβουμε με ένα μικρότερο καλούπι ένα μικρό κύκλο στο κέντρο τους.
  13. Ψήνουμε για 12-15 λεπτά.
  14. Αφαιρούμε και αφήνουμε να κρυώσουν.
  15. Παίρνουμε ½ κουταλάκι του γλυκού από το ταχίνι και το απλώνουμε πάνω από τα άκοπα μπισκότα.
  16. Τοποθετούμε τα μπισκότα με την τρύπα πάνω από τα υπόλοιπα και είναι έτοιμα.

    I used to love the Ali Baba story when I was little…and never connected the sesame from open sesame to tahini…LOL
    These cookies look great Katerina and I love the tahini as a spread…especially with all the health benefits that come with it.

    First of all I must say what a wonderful photograph! (All of them are beautiful but the first one is just stunning).
    Secondly, even though I’m not a vegan (not even vegetarian) I’d love to try tahini in sweets because your cookies look and sound fantastic. I love it in hummus and I also add it to a Chinese (Sechouan) chicken dish, sometimes in salad sauces, but I don’t use it as often as I’d like….

    Τέλεια μπισκότα Κατερίνα.
    Σαν γέμιση δεν το είχα σκεφτεί το ταχίνι.
    συνήθως το ενσωματώνουμε στη ζύμη ή σε άλλο μείγμα.
    Αλλά έτσι πραγματικά είναι πολύ ωραίο 😉

  51. As a kid, I was really fascinated with Ali Baba stories :-)) These cookies are wonderful! I actually have some black tahini that needs to be used up soon.
