Leeks were a vital ingredient of the Egyptian and Mesopotamian people even from second millennium B.C. Ancient Greeks knew leeks and they considered them to be a medicine. It is said that Nero consumed leeks to have a strong and clear voice.

Leek became widely known in Europe from the Romans who brought it from their conquests in middle east.

Leeks are very low in calories, only 54 per piece, and they are reach in flavonoids that protect against intestinal and breast cancer. They contain vitamins such as lutein, zeaxanthin, Thiamine (B1), Riboflavin (B2), Niacin (B3), Pantothenic acid (B5), Vitamin B6, Folate (B9), Vitamin C, Vitamin E, Vitamin K, Calcium, Iron, Magnesium, Manganese, Phosphorus, Folic Acid and Potassium.

They protect eyes from cataract, macular degeneration and heart and the cardiovascular and nervous system. They help our body fight infections and inflammations. Leeks are also known for their aphrodisiac action and they can help sober up faster.

Creamy Chicken with Leeks

I saw these beautiful leeks in my green grocer the other day and I thought that it has quite some time since the last time I made anything with leeks. So, I bought couple of them to prepare a delicious meal for our Sunday lunch. I had absolutely no idea what to do with them and in such moments, I take the help of the audience. So, I asked my son and he wanted a creamy dish with pasta. The dice is cast then and I went straight to my kitchen. I had chicken and some dried shiitake mushrooms which I love dearly for their flavor and texture and along with the leeks made the perfect Sunday meal. Easy, creamy and a crowd pleaser, this dish was a big hit and all the leftovers were eaten before the end of the day.

Ingredients/ Συστατικά
  • 4 chicken breasts, boneless, skinless cut lengthwise to make 8 thinner ones
  • 2 leeks, sliced
  • 3 carrots, thickly sliced and boiled until soft
  • 30 gr. dried shiitake mushrooms
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup chicken stock
  • ½ cup wine
  • 200 ml heavy cream
  • 1 garlic clove, minced
  • Salt, pepper
  • Olive oil and butter
  • Flour to cover the breasts
Instructions/ Εκτέλεση
  1. Boil some water and pour it in a bowl.
  2. Add the shiitake and let them stay for 15 minutes.
  3. Flour slightly the chicken breasts, removing any excess quantity.
  4. In a heavy pan add some olive oil and butter (couple of tbsp. of each) and in medium/high heat sauté the breasts until are almost done and have taken a nice golden color.
  5. Remove and keep them warm.
  6. In the same pan add some olive oil and butter (couple of tbsp. of each) and sauté the leeks, shiitake (after you drain them from water), garlic and peppers until they are translucent and somewhat soft.
  7. Pour the chicken stock, salt and pepper and let them boil in medium heat until the stock reduces to half.
  8. Add the wine and the chicken breasts and let them cooked in medium/low heat for about 10 minutes.
  9. Add the heavy cream and boiled carrots and continue cooking for another five minutes.
  10. If you want the sauce thick then you can thicken it with 1 tsp of corn starch dissolved in 1 tsp of water.
  11. Serve with rice or pasta.

Ingredients/ Συστατικά
  • 4 στήθη κοτόπουλου, χωρίς κόκαλα, και πέτσα κομμένα εγκάρσια ώστε να γίνουν 8 λεπτότερα φιλέτα
  • 2 πράσα, κομμένα σε φέτες
  • 3 καρότα, σε φέτες και βρασμένα μέχρι να μαλακώσουν
  • 30 gr. αποξηραμένα μανιτάρια shiitake
  • 1 κόκκινη πιπεριά, φέτες
  • 1 κίτρινη πιπεριά, φέτες
  • 1 φλ. ζωμό κοτοπούλου
  • ½ φλ. κρασί
  • 200 ml κρέμα γάλακτος
  • 1 σκελίδα σκόρδο, λιωμένο
  • Αλάτι, πιπέρι
  • Ελαιόλαδο και βούτυρο
  • Αλεύρι για να αλευρώσουμε τα στήθη
Instructions/ Εκτέλεση
  1. Βράστε λίγο νερό και ρίξτε το σε ένα μπολ.
  2. Προσθέστε το shiitake και αφήστε να μείνουν για 15 λεπτά.
  3. Αλευρώστε ελαφρά τα στήθη κοτόπουλου, αφαιρώντας οποιαδήποτε περίσσεια ποσότητα.
  4. Σε ένα τηγάνι βάζουμε λίγο ελαιόλαδο και βούτυρο (μερικές κουταλιές) και σε μέτρια/υψηλή θερμότητα σοτάρουμε το κοτόπουλο μέχρι να έχει σχεδόν ψηθεί και να πάρει ένα ωραίο χρυσαφί χρώμα.
  5. Αφαιρέστε και κρατήστε τα ζεστά.
  6. Στο ίδιο τηγάνι προσθέτουμε λίγο ελαιόλαδο και βούτυρο (μερικές κουταλιές) και σοτάρουμε τα πράσα, τα shiitake (αφού τα στραγγίσουμε από το νερό) και τις πιπεριές μέχρι να μαλακώσουν κάπως.
  7. Ρίχνουμε το ζωμό, το αλάτι και το πιπέρι και αφήνουμε να βράσουν σε μέτρια φωτιά μέχρι η ποσότητα να μειωθεί στο μισό.
  8. Σβήνουμε με το κρασί, προσθέτουμε τα στήθη κοτόπουλου και αφήνουμε να μαγειρευτούν σε μέτρια/χαμηλή θερμότητα για περίπου 10 λεπτά.
  9. Προσθέτουμε την κρέμα γάλακτος και τα βραστά καρότα και συνεχίζουμε το μαγείρεμα για άλλα πέντε λεπτά.
  10. Αν θέλετε τη σάλτσα πηχτή, τότε προσθέστε 1 κ.γ. κορν φλάουρ διαλυμένο σε 1 κουταλάκι του γλυκού νερού.
  11. Σερβίρουμε με ρύζι ή ζυμαρικά.

    And I was just wondering what to do with two big leeks that I bought yesterday…. Your dish looks so perfect for our extremely cold winter, I think I’ll go and see if I have some cream in the fridge… (I love the shiitake idea! They add an interesting exotic touch to such a comforting European dish).

    I had no idea that leeks were so important in Greece’s history and Europe. I love leeks and didn’t really discover them until about 10 years ago, so I cherish finding recipes like this that really complement their flavor. Awesome dish!

  11. I don’t buy leeks nearly often enough. Probably because they’re rather expensive in my part of the world for most of the year. Unreasonably so, I think. But their flavor is wonderful! I should just bite the bullet and get them. Anyway, great dish — my kind of food. Thanks!
