Lemon Chicken with Capers and Mustard Potatoes

Tínos is a beautiful island close to Greek mainland that has a history starting from ancient ages. It played a major role in ancient war against the Persians and was protected by Poseidon, god of sea and water. During Greek revolution against the Turkish Empire, the island contributed by offering many fighters and shelter to refugees from other areas of Greece. In 1823 the icon of Mary mother of Jesus was founded in the island a sign that, according to Greeks, showed the just of their revolution for freedom.

Every year on 15th of august the island celebrates the Dormition of Mary mother of Jesus. In 1940 at the down of World War II the island was ready to celebrate yet another anniversary of the important religious event. War had already counted a year and Greece was trying to remain neutral. Nevertheless, it was quite obvious that the country was close to Great Britain which was tested by the extensive bombarding from Luftwaffe.

Italy which was Germany’s ally infested the Mediterranean with its strong fleet. For the celebrations of the island the Greek government has sent a small cruiser, Elli, to participate. Cesare Maria de Vecchi the Italian commander of the Dodecanese and high in rank of the fascistic party of Benito Mussolini has decided to torpedo any hostile military ships in Tínos and Síros (another Greek island close by).

An Italian submarine left its basis and moved towards Tínos island. While the festivities were up and high, the chief petty officer of the ship started shouting that a torpedo was coming fast. It hit the ship on its right side lifting it to the air like a child’s toy. Immediately all commercial ships came to rescue and tried to collect members of the crew who fell to the sea. Unfortunately, the ship started sinking and took with it nine militaries. The government ordered investigation as to find out from whom this attack was. Nevertheless, only after the war did all the evidences come to light as to the true identity of the attacker.

That was a dark, shameful, cowardly moment in the beginning of the war to a country that up until then had no implication at all the ongoing warfare.

Tínos since then apart from the beautiful miraculous church has connected its name with that event and every year that action is commemorated.

The island is very well known for its caper produce. Caper is collected from the rocky soil. Then it is let under the sun to dry. After this stage they dive it in vinegar and salt in order to take that characteristic sour flavor.

I found some caper from Tínos at my local market and I decided to make lemon chicken with capers to jazz up a bit this classic dish. I accompanied it with mustard potatoes which were exquisite. Perfect family meal and definitely a crowd pleaser.

Lemon Chicken with Capers

  • 1.300 gr. / 2.8 lb chicken breasts, boneless, skinless
  • 2 garlic cloves, minced
  • 2 cups chicken stock
  • 1 cup dry white wine
  • 2 tbsp capers
  • 2 tbsp honey
  • Zest of one lemon
  • Juice of one lemon
  • Salt, pepper
  • 3 sprigs of thyme
  • 3 bay leaves
  • Flour for covering the chicken
  • Olive oil for sautéing
Instructions/ Εκτέλεση
  1. Preheat oven to 200°C / 400°F.
  2. Cover the chicken breasts with flour and dust them to discard the excess.
  3. In an oven proof skillet pour the olive oil.
  4. Sauté the chicken breasts in medium heat until they take a light yellow color.
  5. Remove and set aside.
  6. In the same skillet add the garlic and sauté for half a minute.
  7. Pour the chicken stock, the wine, the honey, the juice and zest, the capers and all the herbs and spices and cook in medium heat for couple of minutes.
  8. Turn off the heat and add in this skillet the chicken breasts.
  9. Place in the oven and bake for about 40 minutes or until a golden color has formed on top of the chicken.
  10. Remove the thyme sprigs and bay leaves.
  11. If you want the sauce to be thicker, remove the chicken, place the skillet on the stove in medium heat and add 1 tbsp of corn starch dissolved in 1 tbsp of water.
  12. Serve with mustard potatoes

Mustard Potatoes

  • 10 potatoes
  • 2 cups vegetable stock
  • ¼ cup olive oil
  • 3 tbsp mustard
  • Salt, pepper
  • 2 tsp onion powder or one onion chopped
  • 2 tsp oregano
Instructions/ Εκτέλεση
  1. Cut potatoes in thick pieces.
  2. In your pressure cooker add everything and bring to boil.
  3. Close the pressure cooker and cook according to your manufacturer’s instructions for 40 minutes.
  4. Remove, let the cooker rest and emit the steam and open the lid.
  5. Transfer the potatoes and their juices to a pan or pyrex and broil for about 10 to 15 minutes or until the potatoes have taken a nice golden color.
  6. Serve with the lemon chicken.

Λεμονάτο Κοτόπουλο με Κάπαρη Τήνου

Ingredients/ Συστατικά
  • 1.300 γρ. στήθη κοτόπουλου, χωρίς κόκαλα και πέτσα
  • 2 σκελίδες σκόρδο, ψιλοκομμένες
  • 2 φλ. ζωμό κοτόπουλου
  • 1 φλ. λευκό ξηρό κρασί
  • 2 κουταλιές της σούπας κάπαρη
  • 2 κουταλιές της σούπας μέλι
  • Ξύσμα από ένα λεμόνι
  • Χυμό ενός λεμονιού
  • Αλάτι, πιπέρι
  • 3 κλωνάρια θυμάρι
  • 3 φύλλα δάφνης
  • Αλεύρι για την κάλυψη του κοτόπουλου
  • Ελαιόλαδο για σοτάρισμα
Instructions/ Εκτέλεση
  1. Προθερμαίνουμε το φούρνο στους 200° C.
  2. Καλύπτουμε τα στήθη του κοτόπουλου με το αλεύρι και τινάζουμε το περιττό.
  3. Σε τηγάνι που μπαίνει στο φούρνο ρίχνουμε το ελαιόλαδο.
  4. Σοτάρουμε τα στήθη κοτόπουλου σε μέτρια φωτιά μέχρι να πάρουν ένα ανοιχτό κίτρινο χρώμα.
  5. Αφαιρούμε και αφήνουμε στην άκρη.
  6. Στην ίδια κατσαρόλα προσθέτουμε το σκόρδο και σοτάρουμε για μισό λεπτό.
  7. Ρίχνουμε το ζωμό, το κρασί, το μέλι, το χυμό και το ξύσμα, την κάπαρη και όλα τα βότανα και μπαχαρικά και μαγειρεύουμε σε μέτρια φωτιά για μερικά λεπτά.
  8. Σβήνουμε τη φωτιά και προσθέτουμε σε αυτό ξανά τα στήθη κοτόπουλου.
  9. Τοποθετούμε στο φούρνο και ψήνουμε για περίπου 40 λεπτά ή μέχρι να πάρει ένα χρυσό χρώμα το κοτόπουλο.
  10. Αφαιρούμε τα κλωνάρια θυμαριού και τα φύλλα δάφνης.
  11. Αν θέλετε τη σάλτσα πιο πηχτή, αφαιρέστε το κοτόπουλο, τοποθετήστε το τηγάνι στο μάτι της κουζίνας σε μέτρια φωτιά και προσθέστε 1 κ.σ. κορν φλάουρ διαλυμένο σε 1 κουταλιά της σούπας νερό.
  12. Σερβίρουμε με τις πατάτες με μουστάρδα

  • 10 πατάτες
  • 2 φλ. ζωμό λαχανικών
  • ¼ φλ. ελαιόλαδο
  • 3 κ.σ. μουστάρδα
  • Αλάτι, πιπέρι
  • 2 κ.γ. σκόνη κρεμμύδι ή 1 κρεμμύδι ψιλοκομμένο
  • 2 κ.γ. ρίγανη
Instructions/ Εκτέλεση
  1. Κόβουμε τις πατάτες κυδωνάτες.
  2. Στη χύτρα σας προσθέστε τα πάντα και φέρτε σε βρασμό.
  3. Κλείστε τη χύτρα και μαγειρέψτε σύμφωνα με τις οδηγίες του κατασκευαστή για 40 λεπτά.
  4. Κλείστε το μάτι και βγάλτε όλο τον ατμό.
  5. Ανοίξτε το καπάκι.
  6. Βάζουμε τις πατάτες και τους χυμούς τους σε ένα ταψί ή πυρέξ και ψήνουμε για περίπου 10 έως 15 λεπτά ή έως ότου οι πατάτες έχουν πάρει ένα ωραίο χρυσαφί χρώμα.
  7. Σερβίρουμε με το λεμονάτο κοτόπουλο.

    I am such a caper addict…. I practically have a jar open in the fridge all the time and a second one unopened, just in case I finish the old one. I have been adding it to salads and egg dishes but never thought of cooking it with chicken. This recipe sounds fabulous! (Also the mustard potatoes).
