Creamy Juicy Stuffed Mushrooms

Mushrooms have been consumed by humans since ancient times and were considered to be a very special food due to their appearance and unique taste. Cultivation of mushrooms has developed tremendously and now it is widely eaten everywhere in the world in big quantities.

It is quite uncertain when and how the first consumption of mushrooms has begun, but shreds of evidence suggest that in ancient Greece and Egypt people included them in their everyday diet. An Egyptian wall painting shows a specific type of mushroom and it is believed that it was an exclusive food of the pharaohs. Since they considered them as the “plants of immortality”, they proclaimed them as food only for royalties and thus no commoner had access to them.

In several other countries as China, Russia and Mexico mushrooms were connected to rituals that helped people find lost objects, provided super natural strength and led soul to the realm of gods.

Although, nowadays, we know that nothing of this sort is real, truth is that they are a delicious food and so versatile you can practically do anything with it. In some places in Greece they even make sweet preserves with mushrooms and even though it may sound weird, let me tell you, after trying them, they are delicious even like this.

I love all edible mushrooms and I try to include them as frequently as possible in my cooking. I love the specific touch they give to a dish with their unique flavor and texture. I bought some big white mushrooms the other day to stuff them and I was looking forward to it. Usually, I make special things during weekends because weekdays my work schedule is so heavy that doesn’t allow for innovations, improvisations or other than usual dishes. I decided to make them vegetarian, that is without any meat or ham or bacon. So, I went ahead and made a type of Mornay sauce an easy one and 100% guaranteed that it won’t make any lumps. Then I sautéed Florina pepper, zucchini and the mushroom stems and mixed everything. Put them in the oven and had the most delicious appetizer. Very easy to make and utterly delicious.

Florina pepper’s seed was brought to Greece in the 17th century, and cultivated successfully by the locals, adapting perfectly to the Macedonian climate and soil. Florina’s red peppers were awarded the recognition of Protected Designation of Origin in 1994 by the World Trade Organization (WTO).

Ingredients/ Συστατικά
  • 16 large mushrooms
  • 1 Florina pepper, or red bell pepper, diced
  • 1 zucchini, grated
  • The stems of mushrooms, chopped
  • ¼ cup wine, whatever dry wine you have does the job
  • Salt, pepper
  • ⅕ tsp cumin
For the Mornay Type Sauce
  • 1 cup evaporated milk
  • 2 tbsp butter
  • 2 tbsp corn starch dissolved in 1 tbsp of water
  • 1 egg
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 cup any yellow cheese, grated you have plus some more to garnish before place them in the oven
  • Breadcrumbs
Instructions/ Εκτέλεση
  1. Preheat oven to 175°C/350°F.
  2. Place the mushrooms with their concave side looking downwards and bake for 15 minutes.
  3. Sauté the pepper, zucchini and mushroom stems until they become somewhat soft.
  4. Add the wine, salt, pepper and cumin and continue to sauté until it is evaporated.
  5. Remove and set aside.
For the Mornay Type Sauce
  1. In a pot pour the milk and butter and bring to gentle boil.
  2. Pour the cornstarch, salt, pepper, and onion and garlic powder and whisk until the sauce starts to thicken.
  3. Remove and throw the egg after you have tempered it.
  4. Whisk vigorously and add the cheese.
  5. Put the pot to stove again and lower heat to low.
  6. Let the cheese melt completely and then pour the sauce to the vegetables.
  7. Mix to incorporate and start stuffing the mushrooms.
  8. On top sprinkle some more grated cheese and breadcrumbs.
  9. Bake for about 20 minutes or until a nice golden color has formed on top of them.
  10. Let them cool for 5 minutes and serve.

Ζουμερά Γεμιστά Μανιτάρια

Ingredients/ Συστατικά
  • 16 μεγάλα μανιτάρια
  • 1 πιπεριά Φλωρίνης
  • 1 κολοκυθάκι, τριμμένο
  • Οι μίσχοι των μανιταριών, ψιλοκομμένοι
  • ¼ φλ. κρασί, ό, τι ξηρό κρασί έχετε κάνει
  • Αλάτι, πιπέρι
  • ⅕ κ.γ. κύμινο
Για τη Σάλτσα Τύπου Μορνέ
  • 1 φλ. γάλα εβαπορέ
  • 2 κ.σ. βούτυρο
  • 2 κ.σ. κορν φλάουρ διαλυμένο σε 1 κ.σ. νερό
  • 1 αυγό
  • ½ κ.γ. σκόνη σκόρδου
  • ½ κ.γ. κρεμμύδι σε σκόνη
  • 1 φλ. οποιοδήποτε κίτρινο τυρί, τριμμένο έχετε συν λίγο περισσότερο για γαρνιτούρα πριν τα βάλουμε στο φούρνο
  • Φρυγανιά τριμμένη
Instructions/ Εκτέλεση
  1. Προθερμαίνουμε το φούρνο στους 175° C.
  2. Βάζουμε τα μανιτάρια με την κοίλη πλευρά κοιτάζοντας προς τα κάτω και ψήνουμε για 15 λεπτά.
  3. Σοτάρουμε την πιπεριά, τα κολοκυθάκια και τα στελέχη των μανιταριών μέχρι να μαλακώσουν κάπως.
  4. Προσθέτουμε το κρασί, το αλάτι, το πιπέρι και το κύμινο και συνεχίζουμε το σοτάρισμα μέχρι να εξατμιστεί.
  5. Βγάζουμε από τη φωτιά και αφήνουμε στην άκρη.
Για τη Σάλτσα Τύπου Μορνέ
  1. Σε μια κατσαρόλα ρίχνουμε το γάλα και το βούτυρο και τα φέρνουμε σε ήπιο βρασμό.
  2. Ρίχνουμε το κορνφλάουρ, το αλάτι, το πιπέρι, και το κρεμμύδι και το σκόρδο σε σκόνη και με το σύρμα ανακατεύουμε έως ότου η σάλτσα αρχίσει να πήζει.
  3. Βγάζουμε από τη φωτιά και ρίχνουμε το αυγό.
  4. Ανακατεύουμε ζωηρά και προσθέτουμε το τυρί.
  5. Τη βάζουμε ξανά στη φωτιά και χαμηλώνουμε στο χαμηλό.
  6. Αφήνουμε το τυρί να λιώσει εντελώς και στη συνέχεια ρίχνουμε τη σάλτσα στα λαχανικά.
  7. Ανακατεύουμε να ενσωματωθούν και αρχίζουμε να γεμίζουμε τα μανιτάρια.
  8. Από πάνω πασπαλίζουμε με λίγο τυρί τριμμένο και φρυγανιά.
  9. Ψήνουμε για περίπου 20 λεπτά ή μέχρι ένα ωραίο χρυσό χρώμα να σχηματιστεί πάνω τους.
  10. Αφήνουμε να κρυώσουν για 5 λεπτά και σερβίρουμε.

    Now you’ve got me really curious about Florina pepper… but even more about the mushroom sweets! Just like you I love mushrooms (my favourite are chanterelles and I’ve had them for one meal a day three days in a row now, so imagine….). Anyway, your stuffed mushrooms look fantastic and remind me of your mushrooms with figs I haven’t tested yet!
