Rabbit with Vegetables and Herbs

Rabbits are symbols of fertility and also animals that do not harm anyone. They are cute and non-violent. For all these reasons, probably, man has associated them with Easter. Rabbits are the domesticated breed of hare and can be found in almost all cultures. Many African-American stories have as stars bunnies and also the lucky rabbit’s foot is a staple coming from an old African – American popular magic of hoodoo or voodoo. Lewis Carroll in his novel “Alice in Wonderland” has a white rabbit appearing in front of Alice, whereas Beatrix Potter’s Peter Rabbit appears as a main character in one of her novels.

In Japanese culture moon is inhabited by rabbits that make “mochi” and in Chinese zodiac cycle, rabbit is one of the twelve mythical animals of the Chinese calendar.

I was supposed to make chicken that past weekend, but as I was heading to my butcher to buy it, I saw so many people standing in queue for chicken, that immediately made me change my plans. So, I went for the rabbit and it was so much better. I have tried both domesticated and wild rabbit and I can tell you the difference is quite significant. The wild one has a darker meat, more stiff and with less meat, but it bursts with flavors and gives a very unique flavor to sauces. On the other hand, the domesticated one is fatter, the meat is whiter, but the taste is not as bold and intense as that of the wild.

Nevertheless, we all loved it and it was a great change from the usual. I added a lot of vegetables and herbs and to be honest we didn’t miss at all carbohydrates such as potatoes or pasta or rice. It was a perfect Sunday meal!

Ingredients/ Συστατικά
  • 1 rabbit, cut in portions
  • 5 carrots, thickly sliced
  • 1 yellow, one red pepper, sliced
  • 2 large zucchinis, thickly sliced
  • 2 onions, sliced
  • 500 gr. / 1 lb. white mushrooms, sliced
  • 1 can whole tomatoes in their juice
  • 1 cup beef stock
  • 2 garlic cloves, minced
  • 2 rosemary sprigs
  • 2 thyme sprigs
  • 4 sage leaves
  • 1 tbsp sugar
  • Salt, pepper
  • Olive oil for sautéing
Instructions/ Εκτέλεση
  1. Preheat oven to 200°C / 400°F.
  2. In a skillet pour couple of tbsp. of olive oil and sauté the rabbit portions in medium heat to get a nice golden color.
  3. Remove and place them in a deep pan.
  4. In the same skillet add some more olive oil and sauté the onions and peppers until they become somewhat soft and transparent.
  5. Add the garlic and sauté for a minute.
  6. Remove and add them to the pan with the rabbit.
  7. In the same skillet add some more olive oil and sauté the mushrooms until soft.
  8. Throw them in the deep pan along with the others.
  9. In the same skillet add some more olive oil and sauté the zucchinis and carrots.
  10. Add the tomatoes, sugar salt, pepper, sage, rosemary and thyme and boil for two minutes.
  11. Throw everything to the pan and bake them in the oven for 45 minutes or until the carrots are soft.
  12. Remove, let it cool for ten minutes and serve.
  13. If you want the sauce to be thick, dissolve 1 tbsp of corn starch in 1 tbsp of water and pour it in the sauce while in the oven 1 minute before you take it out.

Κουνέλι με Λαχανικά και Αρωματικά

Ingredients/ Συστατικά
  • 1 κουνέλι κομμένο σε μερίδες
  • 5 καρότα, σε χοντρές φέτες
  • 1 κίτρινη, 1 κόκκινη πιπεριά, σε φέτες
  • 2 μεγάλα κολοκυθάκια σε χοντρές φέτες
  • 2 κρεμμύδια, κομμένα σε φέτες
  • 500 γρ. μανιτάρια κομμένα σε φέτες
  • 1 κονσέρβα με ολόκληρα τοματάκια στο χυμό τους
  • 1 φλ. ζωμό βοδινού
  • 2 σκελίδες σκόρδο, ψιλοκομμένες
  • 2 κλωναράκια δενδρολίβανο
  • 2 κλωναράκια θυμάρι
  • 4 φυλλαράκια φασκόμηλο
  • 1 κ.σ. ζάχαρη
  • Αλάτι, πιπέρι
  • Ελαιόλαδο για το σοτάρισμα
Instructions/ Εκτέλεση
  1. Προθερμαίνετε το φούρνο στους 200° C.
  2. Σε ένα τηγάνι ρίξτε δυο κουταλιές ελαιόλαδο και σοτάρετε τις μερίδες κουνέλι σε μέτρια φωτιά να πάρει ένα ωραίο χρυσαφί χρώμα.
  3. Αφαιρέστε και τοποθετήστε τα σε ένα βαθύ ταψί ή γάστρα.
  4. Στο ίδιο τηγάνι προσθέστε λίγο ελαιόλαδο και σοτάρετε τα κρεμμύδια και τις πιπεριές, μέχρι να γίνουν κάπως μαλακά και διαφανή.
  5. Προσθέστε το σκόρδο και σοτάρετε για ένα λεπτό.
  6. Αφαιρέστε και προσθέστε τα στο ταψί ή τη γάστρα με το κουνέλι.
  7. Στο ίδιο τηγάνι προσθέστε λίγο ελαιόλαδο και σοτάρετε τα μανιτάρια μέχρι να μαλακώσουν.
  8. Ρίξτε τα και αυτά στο ταψί ή τη γάστρα.
  9. Στο ίδιο τηγάνι προσθέστε λίγο ελαιόλαδο και σοτάρετε τα κολοκύθια και τα καρότα.
  10. Προσθέστε τις ντομάτες, ζάχαρη αλάτι, πιπέρι, φασκόμηλο, δεντρολίβανο και θυμάρι και βράστε για δύο λεπτά.
  11. Ρίξτε τα πάντα στο ταψί ή τη γάστρα και ψήστε στο φούρνο για 45 λεπτά ή μέχρι τα καρότα να μαλακώσουν.
  12. Βγάλτε το από τον φούρνο, αφήστε το να κρυώσει για δέκα λεπτά και σερβίρετε.
  13. Αν θέλετε τη σάλτσα να είναι πηχτή, διαλύστε 1 κ.σ. κορν φλάουρ σε 1 κ.σ. νερό και ρίξτε το στη σάλτσα ενώ είναι στο φούρνο 1 λεπτό προτού το βγάλετε έξω.

    i have never, ever eaten rabbit, and i’m not sure i want to do it! they’re so fluffy and cute, and i can’t get past that. that said, i’d love this dish with chicken! 😉
