Four Types Mushroom Pie

Scientists have found mushroom debris that date from 400 million years. In ancient Greece mushrooms were considered to be a very fine food that was meant for kings and gods. Some researchers claim that ambrosia the food consumed by the twelve gods of Olympus was nothing more than a mushroom called Amanita Muscaria known for its hallucinogenic properties. Such types of mushrooms were consumed in mystic rites such as those of Dionysus by Satyrs, Centauri and Maenads.

Dioskorides, the father of medicine, has divided them in two categories, those that were edible and those that were poisonous. Romans, Greeks, Babylonians and Egyptians cultivated mushrooms and consumed them in quantities. It is said that the roman emperor Claudius was poisoned by his wife Agrippina, who gave him to eat poisonous mushrooms. She did that, so as to promote her son Nero to the throne. During Nero’s reign truffle mushrooms were imported from Africa and Greece. They were known for their aphrodisiac properties. It was highly believed that a small portion of these would guarantee a night of wild passion. They were considered so precious that their price exceeded that of gold.

Another one type of mushrooms very well known for its aphrodisiac properties is that of Phallus Impudicus. This mushroom has a phallic shape (that’s why it was named phallus) and a special odor. In medieval years witches dried them and turned them to dust. During their fertility rituals they were daubed with it. They also put it to erotic filters and gave it as a medicine for impotence.

The first scientific survey regarding the cultivation of mushrooms was published in France in 1707. The first cultivations took place in caves, because the conditions there were most adequate for the fungi. Later on, they started cultivating over ground and eventually the whole procedure became more systematic.

I love mushrooms, all types of them and I always try to sneak them in my food. During weekend, I decided to make a mushroom pie but with different types of mushrooms. I used white button, porcini, chanterelle and shiitake. They added such a delicious aroma and flavor to this pie that made it very special.

Usually, I open my own phyllo, but this time I was too lazy, so I used a store bought one. I also added caramelized onions to enhance the flavor. This pie is perfect as a light meal or a snack to go.

Ingredients/ Συστατικά
  • 12 phyllo sheets
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 500 gr. / 17 oz. white button mushrooms
  • 30 gr. / 1 oz. dried chanterelle, shiitake mushrooms
  • 30 gr. / 1 oz. dried porcinis
  • 5 onions, sliced
  • 1 tbsp sugar
  • ½ cup dry white wine
  • Salt, pepper
  • ½ tsp of each dried basil, dried oregano, dried thyme, and garlic powder
  • 100 gr. / 3.5 oz. cream cheese
  • 1 cup cheddar or any other soft cheese
  • 2 eggs
  • ½ cup milk
  • 1 tsp corn starch
  • 1 cup cracked wheat
  • Olive oil to brush the phyllo sheets, about ⅔ of a cup
Instructions/ Εκτέλεση
  1. Put the dried mushrooms in a bowl, add hot water and let them stand for about 15 minutes.
  2. In a blender add the eggs, milk and corn starch and mix.
  3. Set aside.
  4. Cut the white button mushrooms in slices and put aside.
  5. In a large skillet add the olive oil and butter and in medium heat sauté the mushrooms until they are caramelized, adding the 1 tbsp of sugar as well.
  6. When they are dark and sweet add the white button and the dried ones after you have drained them.
  7. Pour the wine and add the herbs, salt and pepper.
  8. Sauté until the white button mushrooms become soft.
  9. Add the cream cheese and cheddar.
  10. Pour the eggs/milk batter and mix gently.
  11. Add the cracked wheat and mix again.
  12. Turn off the fire and let it rest for about 10 minutes.
  13. Take a round pan with about 40cm / 16 in. diameter.
  14. Oil it well and place one phyllo sheet so as to cover the bottom and exceed the sides.
  15. Oil it again.
  16. Place another phyllo sheet.
  17. Repeat this 7 times.
  18. When the seventh phyllo sheet has been placed, add the mushroom filling and level it.
  19. Start putting phyllo sheets on top of filling following the exact same procedure as before.
  20. In the end cut the excessive phyllos from the sides and close the pie by making a cord around with the phyllo.
  21. Cut the upper part with a sharp knife and put it in a preheated oven at 175°C / 350°F.
  22. Be careful to cu the upper phyllo part and not the lower one.
  23. Bake for about 30 minutes.
  24. Remove from the oven and let it rest for about 15 minutes.
  25. Cut the pieces and serve.

  • 12 φύλλα
  • 3 κ.σ. ελαιόλαδο
  • 3 κ.σ. βούτυρο
  • 500 γρ. λευκά μανιτάρια
  • 30 γρ. αποξηραμένα chanterelle, τα μανιτάρια shiitake
  • 30 γρ. αποξηραμένα porcinis
  • 5 κρεμμύδια, κομμένα σε φέτες
  • 1 κ.σ. ζάχαρη
  • ½ φλ. ξηρό λευκό κρασί
  • Αλάτι, πιπέρι
  • ½ κ.γ. από το καθένα ξερό βασιλικό, ρίγανη, θυμάρι και σκόνη σκόρδου
  • 100 γρ. τυρί κρέμα
  • 1 φλ. τυρί τσένταρ ή οποιοδήποτε άλλο μαλακό τυρί
  • 2 αυγά
  • ½ φλ. γάλα
  • 1 κ.γ. κορν φλάουερ
  • 1 φλ. πλιγούρι
  • Ελαιόλαδο για να αλείψετε τα φύλλα, περίπου τα ⅔ της κούπας
Instructions/ Εκτέλεση
  1. Βάλτε τα αποξηραμένα μανιτάρια σε ένα μπολ, προσθέστε ζεστό νερό και αφήστε να σταθούν για περίπου 15 λεπτά.
  2. Σε ένα μπλέντερ προσθέστε τα αυγά, το γάλα και το άμυλο καλαμποκιού και χτυπήστε.
  3. Αφήστε στην άκρη.
  4. Κόψτε τα λευκά μανιτάρια σε φέτες και βάλτε τα στην άκρη.
  5. Σε ένα μεγάλο τηγάνι βάλτε το ελαιόλαδο και το βούτυρο και σε μέτρια φωτιά σοτάρετε τα μανιτάρια μέχρι να καραμελώσουν, προσθέτοντας και τη 1 κουταλιά της σούπας ζάχαρη.
  6. Όταν καραμελώσουν, προσθέστε τα μανιτάρια όλα και τα αποξηραμένα αφού τα στραγγίσετε.
  7. Σβήστε με το κρασί και προσθέστε τα βότανα, το αλάτι και το πιπέρι.
  8. Σοτάρετε μέχρι να μαλακώσουν τα λευκά μανιτάρια.
  9. Προσθέστε το τυρί κρέμα και το τυρί τσένταρ.
  10. Ρίξτε το μίγμα αυγού/ γάλακτος και ανακατέψτε ελαφρά.
  11. Προσθέστε το πλιγούρι και ανακατέψτε και πάλι.
  12. Σβήστε τη φωτιά και αφήστε για περίπου 10 λεπτά.
  13. Πάρτε ένα στρογγυλό ταψί με περίπου 40cm διάμετρο.
  14. Λαδώστε το καλά και βάλτε ένα φύλλο έτσι ώστε να καλύψει τον πάτο και να εξέχει από τις πλευρές.
  15. Λαδώστε και πάλι.
  16. Βάλτε άλλο ένα φύλλο.
  17. Επαναλάβετέ το 7 φορές.
  18. Όταν έχει τοποθετηθεί και το έβδομο φύλλο, προσθέστε τη γέμιση μανιταριών και στρώστε.
  19. Ακολουθείστε την ίδια διαδικασία όπως και πριν με τα φύλλα.
  20. Κλείστε την πίτα κάνοντας ένα κορδόνι γύρω γύρω.
  21. Κόψτε το πάνω μέρος με ένα αιχμηρό μαχαίρι και το βάλτε σε προθερμασμένο φούρνο στους 175° C.
  22. Να είστε προσεκτικοί όταν κόψετε το πάνω φύλλο κρούστας μην κόψετε και αυτό κάτω από τη γέμιση.
  23. Ψήστε για 30 λεπτά περίπου.
  24. Αφαιρέστε από το φούρνο και αφήστε το να ξεκουραστεί για περίπου 15 λεπτά.
  25. Κόψτε τα κομμάτια και σερβίρετε.

    We love love mushrooms and I also use them every chance I can.
    The history of them is great and I enjoyed reading this. Nero’s mother evidently would’ve gone to great lengths to see her son ascend the throne and do just about anything.
    My parents always picked their own mushrooms and it drove the neighbors crazy, they were sure they were poisonous. I’m not that brave and buy them at the store along with phyllo dough. Your recipe is great, similar to one I make that does not include cheese, so this is a must try! Take care
