Vegan Chocolate Tart

Today is Clean Monday for Orthodox Christians. This signals the beginning of a fifty days’ Lent from now until Easter Saturday, which this year is on 30th of April. This particular Lent is a very strict one, having everyone who follows it, to refrain from anything that comes from animals i.e. meat and its byproducts, but also fish is forbidden too. Only winkles, clams, shrimps and generally all seafood that has no blood and bones.

I don’t fast, but we keep the tradition on Clean Monday and all family fasts this particular day, eating exactly what religion dictates. Festive table consists of shrimps, squid, octopus, olives, halva and bread.

This fifty day lent is the oldest of all big Lents of Orthodox church and it was established during 4rth century A.D. In Old Testament Moses fastened for 40 days before he was able to take the 10 Commandments from God and in Bible Jesus abstained from food for 40 days before he went public.

This lent is quite strict and even olive oil is forbidden. I have a friend who fastens throughout all Lents and every time she comes home, I try to find food that is appropriate for her but also tasty. Usually, the most difficult thing is the dessert. In cooking there are plenty of choices like vegetable soups and pasta or carbohydrates in general or seafood. But sweet is a bit of a problem because most of them require heavy cream, milk, butter etc. This is also a problem for many other people who fasten and they see their choices in dessert to diminish dramatically.

So, I decided to test some vegan sweet recipes and be able to present them to my friends and the people who visit here with the hope that they will be able to enjoy them during these days. Although, this dessert is for people who fasten or are vegan, it is also perfect for all the rest of us who don’t.

This tart is so rich in chocolate and so delicious you wouldn’t believe it is vegan. I made it twice one without strawberries and the other one with them and I have to admit that strawberries are just the perfect touch that counterbalances the richness of chocolate. What was an unexpected and pleasant surprise for me, was the topping of toasted oats with demerara sugar. I wouldn’t have thought that this simple combination makes such a great taste. I will certainly use it in some other sweets I have in my mind as a topping. All in all, it is a delicious dessert I highly recommend it to you.

For the Crust
  • 1¼ cup oats
  • ¾ cup whole wheat flour
  • ⅓ cup coconut oil, melted, slightly cooled
  • ¼ cup honey or agave syrup
  • 2 tbsp cocoa powder
  • ½ tsp cinnamon
For the Filling
  • ½ tsp espresso powder
  • ¾ cup very hot water
  • 1 cup cocoa powder
  • 200 gr. / 7 oz. vegan dark chocolate, melted, slightly cooled
  • ⅔ cup honey or agave syrup
  • 2 tsp vanilla extract
  • ⅔ cup plus 1 teaspoon coconut oil, melted, slightly cooled
  • About 10 strawberries cut in slices
  • ¼ teaspoon salt
For the Topping
  • 1 tsp coconut oil
  • 2 tbsp oats
  • 1 tbsp Demerara sugar

For the Crust
  1. Preheat oven to 175°C / 350˚F.
  2. In your blender add the oats, whole wheat flour, coconut oil, honey or agave, cocoa and cinnamon and process until the mixture looks like wet sand.
  3. Take a tart pan with diameter 25 cm / 10 in. and throw the mixture.
  4. Press it into bottom and the sides of the tart pan.
  5. Bake until crust is golden about 20–25 minutes.
  6. Take it out of the oven and let it cool.
For the Filling
  1. Dissolve espresso powder the hot water.
  2. In your food processor add cocoa and let sit 5 minutes.
  3. Add melted chocolate, honey or agave syrup, vanilla, coconut oil and mix until it becomes a very smooth and thick batter.
  4. Take the pan with the crust and arrange the strawberries to cover the bottom.
  5. Pour the filling on top of them and smooth it.
  6. Put it in the fridge while you make the topping.
For the Topping
  1. Put oats and 1 tsp. coconut oil in a non-stick skillet on low heat, stirring until oats are toasted, about 3 minutes.
  2. Add half of demerara sugar, stirring constantly, until sugar is melted.
  3. Remove from heat and add the remaining demerara sugar just to coat.
  4. Let it cool.
  5. Scatter oat mixture over tart.
  6. Put the tart in the fridge until filling is set, at least 1 hour.
  7. Cut tart in slices with a sharp knife.
  8. Let sit at room temperature for 15–20 minutes before serving.

Για τη Βάση
  • 1¼ φλ. Νιφάδες βρώμης
  • ¾ φλ. αλεύρι ολικής άλεσης
  • ⅓ φλ. λάδι καρύδας, λιωμένο, να έχει κρυώσει λίγο
  • ¼ φλ. μέλι ή σιρόπι αγαύης
  • 2 κ.σ. κακάο σε σκόνη
  • ½ κ.γ. κανέλα
Για τη Γέμιση
  • ½ κ.γ. σκόνη espresso
  • ¾ φλ. πολύ ζεστό νερό
  • 1 φλ. κακάο σε σκόνη
  • 200γρ. Σοκολάτα υγείας, λιωμένη, να έχει κρυώσει λίγο
  • ⅔ φλ. μέλι ή σιρόπι αγαύης
  • 2 κ.γ. εκχύλισμα βανίλιας
  • ⅔ φλ. συν 1 κ.γ. λάδι καρύδας, λιωμένο, να έχει κρυώσει λίγο
  • Περίπου 10 φράουλες κομμένες σε φέτες
  • ¼ κ.γ. αλάτι
Για το Γαρνίρισμα
  • 1 κ.γ. λάδι καρύδας
  • 2 κ.σ. νιφάδες βρώμης
  • 1 κ.σ. ζάχαρη Ντεμεράρα
Instructions/ Εκτέλεση
Για τη Βάση
  1. Προθερμαίνετε το φούρνο στους 175° C .
  2. Στο μπλέντερ σας προσθέσετε την βρώμη, το αλεύρι ολικής άλεσης, το λάδι καρύδας, το μέλι ή το σιρόπι αγαύης, το κακάο και την κανέλα και χτυπήστε μέχρι το μίγμα να μοιάζει με υγρή άμμο.
  3. Πάρτε μια ταρτιέρα με διάμετρο 25 cm και ρίξτε το μείγμα.
  4. Πατήστε το ώστε να καλύψει το κάτω μέρος και τις πλευρές της ταρτιέρας.
  5. Ψήστε έως ότου η κρούστα πάρει ένα χρυσό χρώμα για 20 έως 25 περίπου λεπτά.
  6. Βγάλτε από το φούρνο και αφήστε το να κρυώσει.
Για τη Γέμιση
  1. Διαλύστε τη σκόνη espresso στο ζεστό νερό.
  2. Στο μπλέντερ προσθέσετε το κακάο και αφήστε να καθίσει 5 λεπτά.
  3. Προσθέστε την λιωμένη σοκολάτα, το μέλι ή το σιρόπι αγαύης, τη βανίλια, το λάδι καρύδας και το αλάτι και χτυπήστε το μίγμα μέχρι να ομογενοποιηθεί.
  4. Πάρτε την ταρτιέρα με τη βάση και τακτοποιήστε τις φράουλες να καλύψουν όλη τη βάση.
  5. Ρίξτε τη γέμιση από πάνω και στρώστε.
  6. Βάλτε στο ψυγείο μέχρι να ετοιμαστεί το γαρνίρισμα.
Για το Γαρνίρισμα
  1. Βάλτε τις νιφάδες βρώμης και το 1 κ.γ. λάδι καρύδας σε ένα μικρό αντικολλητικό τηγάνι σε χαμηλή φωτιά, ανακατεύοντας μέχρις ότου η ψηθεί η βρώμη, περίπου 3 λεπτά.
  2. Προσθέστε τη μισή ζάχαρη, ανακατεύοντας συνεχώς, μέχρι να λιώσει η ζάχαρη.
  3. Αφαιρέστε από τη φωτιά και προσθέστε την υπόλοιπη ζάχαρη Ντεμεράρα ίσα να ανακατευτεί.
  4. Αφήστε το να κρυώσει.
  5. Πασπαλίστε το μείγμα βρώμης πάνω από την τάρτα.
  6. Τοποθετείστε την τάρτα στο ψυγείο μέχρι να σφίξει, τουλάχιστον 1 ώρα.
  7. Κόψτε την τάρτα σε φέτες με ένα κοφτερό μαχαίρι.
  8. Αφήστε να καθίσει σε θερμοκρασία δωματίου για 15 – 20 λεπτά πριν τη σερβίρετε.
Notes/ Σημειώσεις
Το λάδι καρύδας μπορείτε να το βρείτε στο Θανόπουλο και σε καταστήματα με Ασιατικά τρόφιμα. Αν δε νηστεύετε το καλαμποκέλαιο μπορείτε να το βάλετε στη θέση του λαδιού καρύδας.

    Growing up my grandma would make us fast the Lent every single year! I did not know about some of the shellfish since we were not allowed to eat any, but we had no problems with olive oil. I wonder why you say it’s not allowed.
    This chocolate tart looks amazing! Can’t believe it’s vegan!

    I loved reading a bit about the Orthodox Church and the approach to Lent. As a Roman Catholic, we have a modified fast compared to years past. And, chocolate is an essential item in my diet.

    I always have coconut milk but usually it ends up in Thai or Indian curries/soups. I make only one coconut milk cake, so I’m delighted to learn this delicious original way to make a chocolate tart. It looks so beautiful and luscious, I cannot believe it’s vegan. Those who cannot have cow milk’s cream would be delighted with this recipe. (I can have cream, but I’ll try it anyway!).
