Turkey Burgers with Blue Cheese Sauce

Turkey Burger

Story says, that minced meat comes from the exotic Mongolia and the warriors of Genghis Khan who carried with them milk and horse or camel meat in their fights. Sometimes, unable to stop and have a proper meal, they used to put the meat under their saddles to make it soft and to be cooked by heat and friction. Russians learned about this method when Kublai Khan invaded Russia and most particularly Moscow. The first steak tartar was born and it was assimilated by the Russian food culture and acquired many local elements. During 17th century Russians brought this delicacy to Hamburg port and it became part of the local menu.

As immigration to the new world was flourishing, many immigrants departed from Hamburg port, bringing to their new homeland the method of eating ground meat. Hamburg steak became a part of many of New York’s restaurant menus and from then after years of experimentations and adjustments it became the hamburger we all know today.

As far as the sandwich bread is concerned, although many cultures claim its origin, only around 1765 was it named after the aristocrat John Montagu, 4th Earl of Sandwich who invented this type of food in order to be able to play cards without interruptions. In the US however the first recorded recipe for a sandwich was in 1840.

In Greece the first fast food chain was founded in 1975 under the name “Goody’s”. This chain managed to not only survive through the years but increase its stores and displace even Mc Donald’s when they came to invest here. I think the only two countries in Europe that managed to do this are Greece and Belgium. Today Goody’s is the leader in the Greek market offering a wide range of fast food choices.

I try to avoid feeding my family with all this food although sometimes with a teenager this is inevitable. Nevertheless, at least I can brag about the fact that these times are less than four per month.

I was watching Marco Polo on TV and I remembered the story of burger and suddenly, I felt a strong desire to make one. I had bought for the first time ground turkey and it was sitting in my fridge, blissfully, waiting to be used. I popped into my kitchen and started cooking and baking. I decided to go ahead and make these burgers with blue cheese sauce as it is my husband and son’s favorite. I am not so fond of it, so mine was only with cheese and caramelized onions and mushrooms. They were so juicy, so packed with flavors I had to restrain myself from eating a second portion.

Turkey Burgers with Blue Cheese Sauce

For the Burgers (quantity for about 10 burgers)
  • 1.400 gr. / 3 lb ground turkey
  • 4 tbsp ketchup
  • ½ cup yellow cheese
  • ½ cup breadcrumbs
  • 1 ½ tsp salt
  • 4 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1 egg
  • ¼ cup olive oil
  • 1 tbsp mustard
  • 1 tsp cumin
For the Onions and Mushrooms (quantity for about 5 burgers)
  • 400 gr. / 14 oz. mushrooms
  • 2 large onions
  • Salt
  • 1 tbsp sugar
  • Olive oil + butter
For the Blue Cheese Sauce (quantity for 10 burgers)
  • 1 can evaporated milk
  • 3 tbsp corn starch dissolved in 3 tbsp water
  • 100 gr. / 3.5 oz. blue cheese
  • 1 egg
  • Salt, pepper
  • ¼ tsp ground nutmeg
  • 10 buns
Instructions/ Εκτέλεση
For the Onions and Mushrooms
  1. In a skillet add about 3 tbsp of olive oil and 2 tbsp of butter and sauté the onions in medium heat.
  2. After couple of minutes add the sugar and continue to sauté.
  3. When the onions start to take a dark color, add the mushrooms and continue to sauté until they become soft and the onions will be caramelized.
  4. Remove from heat and set aside.
For the Blue Cheese Sauce
  1. In a pot pour the milk in medium heat.
  2. When the milk starts to smoke add the corn starch and whisk vigorously.
  3. Remove from heat and add the egg, the nutmeg, salt and pepper.
  4. Return to fire lower heat to low and throw the blue cheese and whisk.
  5. Don’t leave it too long; it is nice to have chinks of blue cheese inside the sauce (at least that’s what my boys want. I wouldn’t know otherwise haha)
  6. Remove from fire and set aside.
For the Burgers
  1. In a large bowl put all the ingredients of the burger and knead.
  2. Do not knead too much or the burger will become hard, just for everything to incorporate.
  3. Take a portion and form it as a burger.
  4. Take a nonstick skillet and place it on medium/high heat.
  5. When it becomes hot put the burgers and cook them about five minutes per side.
  1. Take a bun and cut it in half.
  2. Spread some blue cheese sauce and place one burger.
  3. Add some more sauce on top and onions and mushrooms.
  4. Cover it with the other half bun and serve it.
Note: You will notice that the onions and mushrooms portion is for 5 burgers. I did this because I didn’t make all the burgers in one day and mushrooms and onions are not kept well in the fridge. On the contrary, blue cheese sauce is kept fine in the fridge and when you want to use it again you only have to warm it and add some milk to thin it.

Μπιφτέκια Γαλοπούλας Με Σάλτσα Ροκφόρ

Για τα Mπιφτέκια (ποσότητα για περίπου 10 μπιφτέκια)
  • 1.400 γρ. Κιμάς γαλοπούλας
  • 4 κ.σ. κέτσαπ
  • ½ φλ. κίτρινο τυρί
  • ½ φλ. τριμμένη φρυγανιά
  • 1 ½ κ.γ. αλάτι
  • 4 κ.σ. σάλτσα Worcestershire
  • 1 κ.γ. πάπρικα
  • 1 αυγό
  • ¼ φλ. ελαιόλαδο
  • 1 κ.σ. μουστάρδα
  • 1 κ.γ. κύμινο
Για τα Κρεμμύδια και τα Μανιτάρια (ποσότητα για περίπου 5 μπιφτέκια)
  • 400 γρ. μανιτάρια
  • 2 μεγάλα κρεμμύδια
  • Αλάτι
  • 1 κ.σ. ζάχαρη
  • Ελαιόλαδο + βούτυρο
Για τη Σάλτσα Ροκφόρ (ποσότητα για 10 μπιφτέκια)
  • 1 κουτί γάλα εβαπορέ
  • 3 κ.σ. κορν φλάουρ διαλυμένο σε 3 κ.σ. νερό
  • 100 γρ. μπλε τυρί
  • 1 αυγό
  • Αλάτι, πιπέρι
  • ¼ κ.γ. μοσχοκάρυδο
  • 10 ψωμάκια
Instructions/ Εκτέλεση
Για τα Κρεμμύδια και τα Μανιτάρια
  1. Σε ένα τηγάνι προσθέτουμε περίπου 3 κουταλιές σούπας ελαιόλαδο και 2 κουταλιές της σούπας βούτυρο και σοτάρουμε τα κρεμμύδια σε μέτρια φωτιά.
  2. Μετά από μερικά λεπτά προσθέτουμε τη ζάχαρη και συνεχίζουμε να σοτάρουμε.
  3. Όταν τα κρεμμύδια αρχίζουν να παίρνουν ένα σκούρο χρώμα, προσθέτουμε τα μανιτάρια και συνεχίζουμε να σοτάρουμε μέχρι να μαλακώσουν τα μανιτάρια και να καραμελώσουν τα κρεμμύδια.
  4. Αφαιρούμε από τη φωτιά και αφήνουμε στην άκρη.
Για τη Σάλτσα Ροκφόρ
  1. Σε μια κατσαρόλα ρίχνουμε το γάλα σε μέτρια φωτιά.
  2. Όταν το γάλα αρχίζει να καπνίζει προσθέτουμε το κορν φλάουερ και ανακατεύουμε ζωηρά.
  3. Αφαιρούμε από τη φωτιά και προσθέτουμε το αυγό, το μοσχοκάρυδο, το αλάτι και το πιπέρι.
  4. Επιστρέφουμε στη φωτιά, την χαμηλώνουμε στο χαμηλό και ρίχνουμε το μπλε τυρί και ανακατεύουμε.
  5. Αν θέλετε να μείνουν κομμάτια μπλε τυριού στη σάλτσα μην το αφήσετε να βράσει πολύ γιατί θα λιώσουν.
  6. Aφαιρούμε από τη φωτιά και αφήνουμε στην άκρη.
Για τα Μπιφτέκια
  1. Σε ένα μεγάλο μπολ βάζουμε όλα τα υλικά του burger και ζυμώνουμε.
  2. Μην ζυμώσετε πολύ γιατί το burger θα γίνει σκληρό, ίσα ίσα να ενσωματωθούν τα υλικά.
  3. Παίρνουμε μια ποσότητα και φτιάχνουμε ένα μπιφτέκι.
  4. Επαναλαμβάνουμε μέχρι να τελειώσει ο κιμάς.
  5. Παίρνουμε ένα αντικολλητικό τηγάνι και το τοποθετούμε στην εστία σε σε μέτρια/υψηλή θερμοκρασία.
  6. Όταν κάψει βάζουμε τα burgers και τα ψήνουμε περίπου πέντε λεπτά ανά πλευρά.
  1. Παίρνουμε ένα ψωμάκι και το κόβουμε στη μέση.
  2. Βάζουμε λίγη σάλτσα μπλε τυριού και τοποθετούμε ένα burger.
  3. Προσθέτουμε σάλτσα στην κορυφή και κρεμμύδια και μανιτάρια.
  4. Καλύπτουμε με το άλλο μισό ψωμάκι και σερβίρουμε.
Σημείωση: Θα παρατηρήσετε ότι τα κρεμμύδια και τα μανιτάρια είναι για 5 μπιφτέκια. Το έκανα αυτό, επειδή δεν είχα κάνει όλα τα burgers σε μια μέρα και τα μανιτάρια και τα κρεμμύδια δεν διατηρούνται καλά στο ψυγείο. Αντίθετα, η σάλτσα διατηρείται μια χαρά στο ψυγείο και όταν θέλετε να τη χρησιμοποιήσετε και πάλι χρειάζεται μόνο να ζεσταθεί και να προσθέσετε λίγο γάλα για να αραιώσει.
