In all cultures and countries, people used to blame good elves and bad elves for any of their misfortunes. In Greece bad elves were called Kalikátzari and were visiting earth between 24th of December to 6th of January. Those little creatures lived underneath the surface of earth and they were, supposingly, eating snakes and worms, mice etc. They were ugly, little creatures with dark skin, pointed ears, red eyes and monkey teeth. Their main goal was to create problems to humans and mess with their belongings.

They were very nimble, climbed up the trees or run from one roof to another breaking the tiles and making a huge noise. In the old days, when all houses had fireplaces, people believed that they were going down the chimneys and made a mess inside their homes.

Folklore myth says that Kalikátzari lived below the surface of the earth sawing the Tree of Earth. When they were close to cut it completely, they were abandoning their hiding for the fear that the earth would run over them. That time was during Christmas. After holidays were over, they were going down only to see that the tree was safe and sound and start all over again. The tree according to myth was the Christmas Tree and represented God’s Power and Protection to humans.

In general, Kalikátzari were harmless little nasty creatures who could only create fuss and mess without doing any harm to humans. Many fairytales were created to narrate stories about Kalikátzari versus humans and their conflict.

As I was preparing these little canapés I had several misfortunes happened in my kitchen and I couldn’t help thinking that some Kalikátzari escaped from the depths of the earth and thought of coming to my kitchen and mess with it. First, my dishwasher did not clean the dishes as it should, sign that I have to call the plumper to see what is going on. That led to having to wash each and every one of them. Second, my kitchen knife broke, so I guess I have to put yet another one item in my Christmas list. Third, my favorite star mold got rusted and I had to throw it away leaving me with just a tiny one to make the pancakes.

Nevertheless, I am stubborn enough to not let such incidences spoil either my mood or my inspiration, so I went on and made these delicious canapés that can be served during the festive days that are about to come.

The good thing is that you can make the pancakes at least couple of days in advance and store them in the fridge. One day before you can prepare the cream cheese and the same day you can make the shrimps and assemble the whole thing.

Little Pancakes with Cream Cheese, Smoked Salmon and Shrimps

Ingredients/ Συστατικά
For the Pancakes (about 24 small pancakes)
  • These can be made at least two days in advance.
  • ½ cup all purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 egg
  • ½ cup crème fraiche
  • ¼ cup milk
  • 1 ½ tsp corn oil
  • 1 tbsp fresh chives, chopped
For the Cream Cheese Spread
  • This can be made one day ahead
  • 200 gr. cream cheese
  • Pepper
  • ½ tsp onion powder
  • 1 tbsp fresh dill, finely chopped
For the Smoked Salmon
  • 1 smoked salmon fillet
  • Half lime peeled cut in slices, and then each slice cut in 4 pieces
  • Fresh dill to garnish
For the Shrimps
  • 10 small shrimps
  • Smoked paprika
  • Salt and pepper
  • ½ cup Marsala wine, divided
  • ¼ tsp corn starch dissolved in ¼ tsp water
  • Fresh parsley to garnish
Instructions/ Εκτέλεση
For the Pancakes
  1. In a bowl add all the dry ingredients.
  2. Add the egg, milk, crème fraiche, oil and chives and mix until everything is incorporated.
  3. In a skillet add some butter in medium heat.
  4. If you have metal cookie molds with Christmas themes take them out and place them inside the skillet.
  5. Add one spoon of the batter inside the mold and cook them just like you cook pancakes.
  6. It takes about 30 seconds each side.
  7. Remove, let them cool and place them in the fridge.
For the Cream Cheese
  1. Mix everything and place it in the fridge.
Assembly of the Smoked Salmon Canapés
  1. Take 12 of the little pancakes and spread with a piping bag some cream cheese.
  2. Cut the salmon fillet in 12 strips and add one in each pancake.
  3. Decorate on top with a small piece of lime and fresh dill.
For the Shrimps Canapés
  1. In a skillet pour 1 to 2 tbsp of olive oil and in high heat sauté the shrimps for one minute adding salt and smoked paprika.
  2. Pour ¼ of the Marsala wine and cook until it is completely absorbed.
  3. At that point remove the shrimps and either you keep them in the fridge for later or put the aside and keep them warm until served.
  4. In the same skillet add the rest of the Marsala wine, scrape the skillet and pour the corn starch.
  5. Let it boil for a few seconds until it thickens
  6. Remove and set aside.
Assembly of the Shrimps Canapés
  1. Take the rest 12 pancakes
  2. Add the rest of the cream cheese.
  3. Top with one shrimp per canapé and drizzle about ¼ tsp of the Marsala sauce.
  4. Garnish with parsley.
  5. Note: The Marsala sauce must be warm so either you make it a few minutes before serving them or make it in advance and warm it up adding another ¼ cup of the wine just before serving it.

Καναπεδάκια με Καπνιστό Σολομό, Γαρίδες και Τυρί Κρέμα

Ingredients/ Συστατικά
Για τις Τηγανίτες (περίπου 24 μικρές τηγανίτες)
  • Αυτές μπορούν να γίνουν τουλάχιστον δύο ημέρες νωρίτερα.
  • ½ φλ. αλεύρι για όλες τις χρήσεις
  • 1 κ.γ. μπέικιν πάουντερ
  • ½ κ.γ. αλάτι
  • 1 αυγό
  • ½ φλ. Κρεμ φρές
  • ¼ φλι. γάλα
  • 1 ½ κ.γ. αραβοσιτέλαιο
  • 1 κ.σ. φρέσκο σχοινόπρασο, ψιλοκομμένο
Για το Τυρί Κρέμα
  • Αυτό μπορεί να γίνει μια μέρα πριν
  • 200 γρ. Τυρί κρέμα
  • Πιπέρι
  • ½ κ.γ. κρεμμύδι σε σκόνη
  • 1 κ.σ. φρέσκος άνηθος, ψιλοκομμένος
Για τον Καπνιστό Σολομό
  • 1 φιλέτο καπνιστού σολομού
  • Μισό λάιμ ξεφλουδισμένο κομμένο σε φέτες, και κάθε φέτα σε 4 κομμάτια
  • Φρέσκο άνηθο για γαρνιτούρα
Για τις Γαρίδες
  • 10 μικρές γαρίδες
  • Καπνιστή πάπρικα
  • Αλάτι και πιπέρι
  • ½ φλ. κρασί Μαρσάλα
  • ¼ κ.γ. κορν φλάουρ διαλυμένο σε ¼ κ.γ. νερού
  • Φρέσκο μαϊντανό για γαρνιτούρα
Instructions/ Εκτέλεση
Για τις Τηγανίτες
  1. Σε ένα μπολ προσθέστε όλα τα στεγνά υλικά.
  2. Προσθέστε το αυγό, το γάλα, την κρεμ φρες, το λάδι και το σχοινόπρασο και ανακατέψτε μέχρι τα πάντα να ενσωματωθούν.
  3. Σε ένα τηγάνι προσθέστε λίγο βούτυρο σε μέτρια φωτιά.
  4. Αν έχετε μεταλλικά καλούπια για μπισκότα με θέματα Χριστουγεννιάτικα βάλτε τα μέσα στο τηγάνι.
  5. Προσθέστε ένα κουτάλι της σούπας από το μίγμα μέσα στο κάθε καλούπι και ψήστε τα όπως ακριβώς ψήνετε τις τηγανίτες περίπου 30 δευτερόλεπτα κάθε πλευρά.
  6. Αφαιρέστε, αφήστε να κρυώσουν και βάλτε τις στο ψυγείο.
Για το Τυρί Κρέμα
  1. Αναμείξτε τα πάντα και τοποθετήστε το στο ψυγείο.
Συναρμολόγηση των Καναπέ Σολομού
  1. Πάρτε 12 μικρές τηγανίτες και με το κορνέ βάλτε λίγο τυρί κρέμα.
  2. Κόψτε το φιλέτο σολομού σε 12 λωρίδες και προσθέστε ένα σε κάθε τηγανίτα.
  3. Διακοσμήστε στην κορυφή με ένα μικρό κομμάτι λάιμ και το φρέσκο άνηθο.
Για τα Καναπεδάκια με Γαρίδες
  1. Σε ένα τηγάνι ρίξτε 1 έως 2 κουταλιές της σούπας ελαιόλαδο και σε δυνατή φωτιά σοτάρετε τις γαρίδες για ένα λεπτό, προσθέτοντας αλάτι και καπνιστή πάπρικα.
  2. Ρίξτε το ¼ του φλυτζανιού κρασί Marsala και σοτάρετε μέχρι να απορροφηθεί εντελώς.
  3. Σ’αυτό το σημείο βγάλτε τις γαρίδες και είτε κρατήστε τις στο ψυγείο για αργότερα ή βάλτε τις στην άκρη και κρατήστε τις ζεστές μέχρι να τις χρησιμοποιήσετε.
  4. Στην ίδια κατσαρόλα, προσθέστε το υπόλοιπο του κρασιού Marsala, ξύστε το τηγάνι και ρίξτε το κορν φλαουρ.
  5. Αφήστε το να βράσει για λίγα δευτερόλεπτα μέχρι να πήξει.
  6. Βγάλτε από τη φωτιά.
Συναρμολόγηση των Καναπέ Γαρίδας
  1. Πάρτε τις υπόλοιπες 12 τηγανίτες.
  2. Προσθέστε το υπόλοιπο τυρί κρέμα.
  3. Βάλτε μία γαρίδα σε κάθε καναπεδάκι και ρίξτε από πάνω περίπου ¼ κουταλάκι του γλυκού από τη σάλτσα Marsala.
  4. Γαρνίρετε με μαϊντανό.
  5. Σημείωση: Η σάλτσα Marsala πρέπει να είναι ζεστή έτσι, είτε την ετοιμάζετε λίγα λεπτά πριν από το σερβίρισμα τους ή τη φτιάχνετε από πριν και τη ζεσταίνετε εκείνη την ώρα προσθέτοντας ένα άλλο ¼ φλιτζάνι κρασί.
