Chestnut came to Greece during Hellenistic years from the area of Asia Minor and Pontos. Immediately Greeks appreciated its unique flavor and texture and included it in their diet. It became a favorite food for people in villages and in cities and many sayings containing chestnuts started to circulate expressing feelings or situations.
One phrase that is widely used here for someone who is very tough and speaks his opinion without reservations is “He doesn’t gift chestnuts”. This phrase according to linguists has its roots in Ottoman occupation in Greece between 1453 and 1821. During this period Greece was ruled by Ottomans and only a small part in the southern part of the country, Mani, was free. People of Mani were very tough and they were counting their population not according to individuals, but on how many guns each village had, assuming that everyone owned a gun.

Ibrahim Pasha wanted eagerly to occupy this part of Greece that resisted their dominance and tried to find several innovative ways to do so. He was very cunning and one day he invented a scheme to trap them. He sent soldiers dressed as chestnut sellers to the villages of Mani, in order to find out where the men of the area were hiding. Chestnut sellers, basically, were men with simple grill apparatus on which they were baking chestnuts.

So, the soldiers dressed as chestnut sellers went to Mani and started baking their chestnuts. Women and children of Mani were gathering around them attracted by the beautiful smell of baking chestnuts. Soldiers, in order to be able to collect all the information they were asked to gather, were giving their chestnuts for free to all women and children. They were hoping this way they could extract the valuable facts. Nevertheless, Mani women were very smart and immediately understood that something wasn’t right. They informed their husbands and they showed up and captured the spies. When the phony chestnut sellers admitted their true identity and role, they asked the Mani men what would happen to them. The Mani men replied ironically: “We don’t gift chestnuts”. I strongly believe that they didn’t make it back to the Turkish camp.

I love chestnuts and there are still chestnut sellers who bake their chestnuts on a grill in streets during fall. I also love making sweets with chestnuts and I think that they pair perfectly with chocolate. I had some friends coming over on Saturday and I thought of making something special since I haven’t seen them for over a year. So, I cooked for them Mexican and I made this delicious Chocolate Chestnut Torte. It is quite easy only it must be made one day ahead. Other than that, it is a “piece of cake” really and so delicious.

Chestnut Chocolate Mousse Torte

For the Cake
  • ½ cup butter
  • 1 ½ cups sugar
  • ½ tsp salt
  • 2 tsp vanilla extract
  • ½ tsp baking powder
  • 2 tsp espresso powder
  • ⅔ cup Cocoa
  • 3 large eggs
  • 1 ¼ cups all purpose flour
  • ¾ cup milk
For the Chestnut Mousse
  • 150 gr. / 5 oz. heavy cream 35% fat
  • 115 gr. / 4 oz. water
  • 400 gr. / 14 oz. chestnut pate
  • 350 gr. / 12 oz. chestnut spread
  • 200 gr. / 7 oz. caster sugar
  • 4 sheets of gelatin
  • 2 tbsp dark rum
  • 600 gr. / 21 oz. heavy cream 35%
For the Chocolate Ganache
  • 300 gr. / 10.5 oz. dark chocolate 60% cocoa
  • 240 gr. / 8.5 oz. heavy cream 35% fat
Instructions/ Εκτέλεση
For the Cake
  1. Preheat oven to 175°C / 350°F.
  2. Add all the ingredients up to the cocoa and the cocoa in your stand mixer’s bowl and mix in medium speed until a muddy batter is created.
  3. Add the eggs one by one mixing well after each addition.
  4. Add half of the flour and beat in low speed.
  5. Pour all the milk and continue to beat.
  6. Finally, add the rest of the flour and beat until it is incorporated.
  7. Take a rounded spring form with diameter 24 cm / 9.5 in.
  8. Butter it and flour it well.
  9. Pour the batter and bake it until a toothpick comes out clear about 40 minutes.
  10. Remove from the pan and let it cool completely.
For the Chestnut Mousse
  1. In a bowl of cold water add the gelatin sheets to soften.
  2. In a pot pour the 150 gr. / 5 oz. of heavy cream and the water and bring to boil.
  3. Add the chestnut pate and the spread and whisk to dissolve.
  4. Note: I used chestnut pate which is unsweetened and chestnut spread which has sugar. With that combination I added 200 gr. / 7 oz. sugar. You can use only chestnut pate or only chestnut spread. In the first case you will have to increase the amount of sugar at least by 100 gr. / 3.5 oz. In the second case perhaps lower it by 50 / 1.7 to 100 gr / 3.5 oz.
  5. Squeeze the water from the gelatin sheets and add them to the pot.
  6. Stir until they are completely dissolved.
  7. Add the rum.
  8. Remove from fire and set aside.
  9. Put the cold 600 gr. / 21 oz. of heavy cream in your stand mixer bowl and whisk vigorously until it becomes thick with soft peaks.
  10. With a spatula mix gently the heavy cream with the chestnut batter until they are incorporated.
  11. Put the batter in your refrigerator for at least three hours to cold.
  12. Take your cake and cut three equally thick disks.
  13. You will use just the two of them.
  14. The other one wrap it up and put it in your freezer for future use.
  15. Take the mousse out of the fridge and whisk for 30 seconds to make your mousse fluffy.
  16. Take on cake disk and place it on a platter.
  17. On top spread a bit less than half of the chestnut mousse.
  18. Place the other cake disk on top.
  19. Spread the remaining chestnut mousse on top and on the sides of the cake.
  20. Place the cake in the freezer to get completely frozen.
  21. In this way it will be easier for you to decorate with the ganache.
For the Chocolate Ganache
  1. In a glass bowl melt in the microwave the chocolate and heavy cream until they become a dark liquid.
  2. Take the torte out of the freezer.
  3. Lay a parchment paper on your counter.
  4. On top of it place a rack.
  5. Take the torte and put it on the rack.
  6. Pour the ganache covering so as to cover the top and the sides of the torte.
  7. With a spatula spread to make even on top.
  8. If you like you can decorate with milk chocolate grinding and or ground cookies.

Για το Κέικ
  • ½ φλ. βούτυρο
  • 1 ½ φλ. ζάχαρη
  • ½ κ.γ. αλάτι
  • 2 κ.γ. εκχύλισμα βανίλιας
  • ½ κ.γ. μπέικιν πάουντερ
  • 2 κ.γ. σκόνη καφέ espresso
  • ⅔ φλ. κακάο
  • 3 μεγάλα αυγά
  • 1 ¼ φλ. αλεύρι για όλες τις χρήσεις
  • ¾ φλ. γάλα
Για την Μους Κάστανου
  • 150 γρ. κρέμα γάλακτος 35% λιπαρά
  • 115 γρ. νερό
  • 400 γρ. πατέ κάστανου
  • 350 κρέμα κάστανου
  • 200 γρ. ζάχαρη άχνη
  • 4 φύλλα ζελατίνης
  • 2 κ.σ. σκούρο ρούμι
  • 600 γρ. κρέμα γάλακτος 35%
Για το Ganache Σοκολάτας
  • 300 γρ. σοκολάτα με 60% κακάο
  • 240 γρ. κρέμα γάλακτος 35% λιπαρά
Instructions/ Εκτέλεση
Για το Κέικ
  1. Προθερμαίνετε το φούρνο στους 175° C.
  2. Προσθέτετε όλα τα υλικά μέχρι το κακάο και το κακάο στο μπολ του μίξερ ανακατεύετε το μίγμα σε μέτρια ταχύτητα μέχρι να δημιουργηθεί ένα μίγμα σα λάσπη.
  3. Προσθέστε τα αυγά ένα ένα ανακατεύοντας καλά μετά από κάθε προσθήκη.
  4. Προσθέστε το μισό αλεύρι και χτυπήστε σε χαμηλή ταχύτητα.
  5. Ρίξτε όλο το γάλα και συνεχίστε να κτυπάτε.
  6. Τέλος, προσθέστε το υπόλοιπο αλεύρι και κτυπήστε μέχρι να ενσωματωθούν.
  7. Πάρτε ένα στρογγυλό τσέρκι ή μια φόρμα με ανοιγώμενα πλαινά με διάμετρο 24 cm.
  8. Βουτυρώστε και αλευρώστε καλά.
  9. Ρίξτε το χυλό και ψήστε μέχρι το μαχαίρι να βγαίνει καθαρό περίπου 40 λεπτά.
  10. Βγάλτε το κέικ από τη φόρμα και αφήστε το να κρυώσει εντελώς.
Για την Μους Κάστανου
  1. Σε ένα μπολ με κρύο νερό, προσθέστε τα φύλλα ζελατίνας για να μαλακώσουν.
  2. Σε μια κατσαρόλα ρίξτε τα 150 γρ. κρέμα γάλακτος και το νερό και φέρτε σε βρασμό.
  3. Προσθέστε το πατέ κάστανου και την κρέμα κάστανου και ανακατέψτε μέχρι να διαλυθεί.
  4. Σημείωση: Χρησιμοποίησα πατέ κάστανου που είναι χωρίς ζάχαρη και κρέμα κάστανου που έχει ζάχαρη. Με αυτό το συνδυασμό πρόσθεσα 200 γρ. ζάχαρη. Μπορείτε να χρησιμοποιήσετε μόνο πατέ κάστανου ή μόνο κρέμα κάστανου. Στην πρώτη περίπτωση θα πρέπει να αυξήσετε το ποσό της ζάχαρης, τουλάχιστον κατά 100 γρ. Στη δεύτερη περίπτωση ίσως να πρέπει να βάλετε από 50 έως 100 γρ. λιγότερο.
  5. Στραγγίστε τα φύλλα ζελατίνης για να φύγει το νερό και προσθέστε τα στην κατσαρόλα.
  6. Ανακατέψτε μέχρις ότου διαλυθούν εντελώς.
  7. Προσθέστε το ρούμι.
  8. Αφαιρέστε από τη φωτιά και βάλτε το στην άκρη να κρυώσει.
  9. Βάλτε την κρύα κρέμα 600 γρ. στο μπολ του μίξερ και ανακατέψτε σε υψηλή ταχύτητα μέχρι να πήξει σαν γιαούρτι.
  10. Με μια σπάτουλα ανακατέψτε την κρέμα γάλακτος με το μίγμα του κάστανου μέχρι να ενσωματωθούν.
  11. Βάλτε το μίγμα στο ψυγείο για τουλάχιστον τρεις ώρες.
  12. Πάρτε το κέικ σας και κόψτε τρεις δίσκους ίδιου πάχους.
  13. Θα χρησιμοποιήσετε μόνο τους δύο από αυτούς.
  14. Τον άλλο τυλίξτε τον με wrap και βάλτε τον στην κατάψυξή σας για μελλοντική χρήση.
  15. Βγάλτε τη μους από το ψυγείο και ανακατέψτε για 30 δευτερόλεπτα για να γίνει αφράτη.
  16. Πάρτε τον ένα δίσκο του κέικ και βάλτε τον σε μια πιατέλα.
  17. Από πάνω απλώστε κάτι λιγότερο από το μισό της μους κάστανου.
  18. Τοποθετήστε τον άλλο δίσκο κέικ πάνω από τη μους.
  19. Απλώστε την υπόλοιπη μους κάστανο στην κορυφή και στις πλευρές του κέικ.
  20. Τοποθετήσετε το κέικ στην κατάψυξη για να παγώσει εντελώς.
  21. Με αυτόν τον τρόπο θα είναι ευκολότερο για σας να διακοσμήσετε με το γκανάς.
Για το Γκανάς Σοκολάτας
  1. Βάλτε τη σοκολάτα και την κρέμα γάλακτος σε ένα γυάλινο μπολ να λιώσουν στο φούρνο μικροκυμάτων μέχρι να ομογενοποιηθούν.
  2. Βγάλτε την τούρτα από την κατάψυξη.
  3. Βάλτε ένα χαρτί ψησίματος στον πάγκο που θα δουλέψετε.
  4. Από πάνω βάλτε μια σχάρα.
  5. Πάρτε την τούρτα και τοποθετήστε τη στη σχάρα.
  6. Ρίξτε τη γκανάς έτσι ώστε να καλύψει την επιφάνεια και τις πλευρές της τούρτας.
  7. Με μια σπάτουλα απλώστε έτσι ώστε να γίνει ένα λείο στρώμα από πάνω.
  8. Αν σας αρέσει μπορείτε να διακοσμήσετε με τριμμένο μπισκότο ή μαρόν γλασέ.
