It is relatively unknown where the first lemon tree was cultivated. It is believed to have been in the Deccan plateau in India. The word lemon comes from the Persian word limu. In Greece, lemon seeds were brought from Persia and the tree started to be cultivated since the age of Aristophanes.
There is an area in the southern part of Greece in Peloponnese called Trizinia. In there, there is a lemon forest that has over 25.000 lemon trees. Lemon trees were cultivated in this forest even before 1750 and they were exported to Constantinople (Istanbul), several parts of Turkey etc. In 1828 the forest counted 18.000 lemon trees and it produced 8 million lemons. Later on, the trees increased and so did the lemon produce. During a dengue epidemic in 1920, lemon was used as a medicine for people. Between 1950 and 1960 lemons were exported to Soviet Union, Germany and other countries of Europe.

Today this lemon forest has been acknowledged by UNESCO as a monument of natural beauty and it is protected. Although the trees have been severely damaged by a disease and their number has decreased, efforts are being made to restore them and make them strong as they used to be.
Although I am a chocolate lover, once in a while I enjoy a dessert other than chocolate. On the other hand my husband doesn’t share my love for the stuff and so from time to time, I make a sweet that tries to compromise things and actually I enjoy it. I love citrus flavor in sweet and savory food. I always have thought about making a lemon pie, but I considered it to be too time consuming. I am quite busy during weekdays and weekends I have to spend time cooking, photographing, writing my post and taking my son out to meet with his friends. I always try to find ways to make difficult things easy and in this case, when I saw the recipe for lemon curd in microwave, I thought that it was the right moment for me to make that lemon pie eventually.

I made some major changes to the recipe and here it is a Lemon Pie with shortcuts that make the total time from beginning to end to be 30 minutes plus about two hours in the fridge, but this doesn’t count because you don’t have to do anything yourself just let it chill.
Anyway, if you are looking an easy peasy Lemon Pie this is the one for you and it is so lemony and refreshing you won’t believe it!

Ingredients/ Συστατικά
For the Crust
  • 300 gr. / 10.5 oz. Digestives
  • 3 tbsp melted butter
For the Lemon Curd
  • 2 large eggs
  • 1 cup sugar
  • ½ cup melted butter
  • ⅓ cup lemon juice
  • ⅔ water
  • 2 tsp corn starch
For the Meringue
  • 4 egg whites
  • Pinch of tartar
  • 3 tbsp confectioner’s sugar
Instructions/ Εκτέλεση
For the Crust
  1. Preheat oven to 175°C / 375°F.
  2. Put the digestives in your blender and make them fine crumbles.
  3. Put them in a bowl and pour the melted butter.
  4. Mix until all crumbles have been wet.
  5. Take a round tart pan with diameter of 25 cm/10 in.
  6. Place the crumbles on the bottom and spread so as to cover it and the sides up to 2 cm / a bit less than 1 in.
  7. Place it in the oven and bake for 10 minutes.
  8. Remove and set aside.
For the Lemon Curd
  1. Take a microwave oven safe bowl and put the eggs and sugar and whisk to incorporate.
  2. Add the melted butter and whisk again.
  3. Add the lemon juice and the water in which you have dissolved the corn starch.
  4. Mix to incorporate and place it in the microwave oven putting underneath a dish.
  5. Start you oven at the highest temperature for 1 minute.
  6. Remove whisk and put back in the microwave for another one minute and so on and so forth.
  7. In my oven it took 4 minutes to arrive at 86°C/ 186°F which is the right temperature for the eggs to cook.
  8. If you don’t have a thermometer, you will know it’s ready when it covers the back of your spoon and doesn’t drop all.
  9. Remove and set aside.
For the Meringue
  1. Put the egg whites in your stand mixer and with the wire whisk until soft picks form.
  2. Add the cream of tartar and the sugar and continue to whisk until stiff picks are formed.
  1. Take the tart pan with the digestives and spread the lemon curd to cover the bottom entirely.
  2. On top arrange the meringue in any shape you like making sure it covers the filling completely.
  3. Bake in a preheated oven at 175°C / 375°F for about 10 minutes or until the meringue has taken a nice golden color!

Για το Κέλυφος
  • 300 γρ. μπισκότα digestive
  • 3 κ.σ. λιωμένο βούτυρο
Για την Κρέμα Λεμονιού
  • 2 μεγάλα αυγά
  • 1 φλ. ζάχαρη
  • ½ φλ. λιωμένο βούτυρο
  • ⅓ φλ. χυμό λεμονιού
  • ⅔ φλ. νερό
  • 2 κ.γ. κορν φλάουρ
Για τη Μαρέγκα
  • 4 ασπράδια αυγού
  • Μια πρέζα κρεμόριο
  • 3 κ.σ. άχνη ζάχαρη
Instructions/ Εκτέλεση
Για το Κέλυφος
  1. Προθερμάνετε το φούρνο στους 175° C.
  2. Βάλτε τα μπισκότα στο μπλέντερ σας και θρυμματίστε τα.
  3. Βάλτε τα σε ένα μπολ και ρίξτε το λιωμένο βούτυρο.
  4. Ανακατέψτε μέχρι όλα να υγρανθούν.
  5. Πάρτε μία ταρτιέρα με διάμετρο 25 cm.
  6. Τοποθετήστε τα τριμμένα μπισκότα στο κάτω μέρος και απλώστε τα ώστε να καλύψουν και τις πλευρές κατά 2 cm.
  7. Τοποθετήστε το στο φούρνο και ψήστε για 10 λεπτά.
  8. Βγάλτε το και βάλτε το στην άκρη.
Για την Κρέμα Λεμονιού
  1. Πάρτε ένα μπολ που μπαίνει στο φούρνο μικροκυμάτων και βάλτε τα αυγά και την ζάχαρη και ανακατέψτε να ενσωματωθούν.
  2. Προσθέστε το λιωμένο βούτυρο και ανακατέψτε ξανά.
  3. Προσθέστε το χυμό λεμονιού και το νερό στο οποίο έχετε διαλύσει το κορν φλάουρ.
  4. Ανακατέψτε για να ενσωματωθούν και τοποθετήστε το μπολ στο φούρνο μικροκυμάτων βάζοντας από κάτω ένα πιάτο.
  5. Ξεκινήστε το φούρνο στην υψηλότερη θερμοκρασία για 1 λεπτό.
  6. Βγάλτε το, ανακατέψτε το και ξαναβάλτε το στο φούρνο μικροκυμάτων για άλλο ένα λεπτό και ούτω καθεξής.
  7. Στο φούρνο μου χρειάστηκαν 4 λεπτά για να φτάσει το μίγμα στους 86° που είναι η σωστή θερμοκρασία για να έχουν μαγειρευτεί τα αυγά.
  8. Εάν δεν έχετε θερμόμετρο, θα γνωρίζετε ότι είναι έτοιμο όταν καλύπτει το πίσω μέρος του κουταλιού σας.
  9. Βγάλτε το και βάλτε το στην άκρη.
Για τη Μαρέγκα
  1. Βάλτε τα ασπράδια στο μίξερ σας και με το σύρμα χτυπήστε μέχρι να αρχίζει να πήζει.
  2. Προσθέστε το κρεμόριο και τη ζάχαρη και συνεχίστε να χτυπάτε μέχρι να σχηματιστεί μια σφιχτή μαρέγκα.
  1. Πάρτε την ταρτιέρα και ρίξτε από πάνω από τα μπισκότα την κρέμα λεμονιού και απλώστε να πάει παντού.
  2. Από πάνω ρίξτε τη μαρέγκα και στρώστε τη φροντίζοντας αυτή να καλύπτει την κρέμα λεμονιού και να μην φαίνεται από πάνω.
  3. Ψήστε σε προθερμασμένο φούρνο στους 175° C για περίπου 10 λεπτά ή μέχρι η μαρέγκα έχει πάρει ένα ωραίο χρυσό χρώμα!

    Είναι τόσο αρωματικό και υπέροχα γευστικό!
    Από τα πιο άψογα συνοδευτικά για τον καφέ μου, μπορώ να την καταναλώνω ασταμάτητα.
    Η βάση με τα συγκεκριμένα μπισκότα μου αρέσει πολύ.
    Και αν έχουμε ετοιμάσει την κρέμα λεμονιού 1-2 μέρες πιο πριν, ο χρόνος που απαιτείται για τη συνταγή μειώνεται σημαντικά!

    I like the idea of cookie crusts, Katerina. Definitely cuts down on time. Key Lime pies are what we mostly make in Florida and I use condensed milk in mine. You’ve made a lovely lemon curd here…must try!
