Chocolate Chip Cookies

This weekend is the last one of our carnival here in Greece. From Monday, which is called Clean Monday, start the 48 days of fastening until the 15th of April which is the Christian Orthodox Easter.

My son had a party at his new school and he was dressed as Zorro, so I thought it was the perfect occasion for me to make these Chocolate Chip Cookies I was flirting with for a long time, to offer to his classmates.

Very easy, very tasty, very sweet with chocolate chips inside them. My son told me that they became smoke in no time. No wonder!

I am not reinventing the wheel here; I am sure all of you have a chocolate chip cookie recipe in your files. Perhaps you want to try this as well. They were crispy around the edges and soft and chewy towards the center.

I am very easy when it comes to cookies. I like them all, soft, chewy, crispy, crunchy, you name it.

I am keeping this recipe for children’s parties, since they’ve enjoyed such a huge approval from this specific target group!

The recipe comes from King Arthur’s Baking Banter. I made couple of changes as always, but you can find the original recipe in their site.

Chocolate Chip Cookies


2/3 cup or 146 gr. light brown sugar, firmly packed

2/3 cup or 134 gr. granulated sugar

½ cup or 113 gr. margarine at room temperature

½ cup corn oil

½ tsp salt

2 tsp vanilla extract

1 tsp cider vinegar

1 tsp baking powder

2 medium sized eggs

2 cups or 256 gr. all-purpose flour

2 cups chocolate chips

Preheat oven to 175° C.

In the mixer bowl combine the sugars, the margarine, the salt, the vanilla, the vinegar and the baking powder. Beat until smooth creamy.

Beat in the eggs one at a time and lower the speed. Throw the flour and make sure you scrape the sides of the bowl, so as for all the ingredients to be combined thoroughly.

Take a big baking pan and line it with parchment paper. Scoop with a spoon or as in my case with the ice cream scoop, balls about 3cm leaving a space of about 4cm among them.

Bake for 10 to 12 minutes depending on their size. Take them out of the oven and let them cool completely!

    I have been trying several chocolate chip cookie recipes looking for that “one”. So far we have liked every recipe but I am sill on the hunt…can’t wait to try this one. It will be the first time I have put vinegar in them. I did try one that had cornstarch and they went over really well. Thanks for sharing.

    You can never go wrong with chocolate chip cookies. I am very intrigued by the addition of cider vinegar, so I’m sure we will be giving these a try very soon.

It sounds like it’s going well so far and bringing in delicious treats surely can’t hurt the cause. :)

  45. I have never tried using corn oil in chocolate chip cookies. These cookies do have a smoother texture than most! I will need to try this version, they look delicious. I am not surprised that that disappeared!

  52. Katerina-are you ready to ship those amazing cookies to me?…well, I would like a dozen of those perfect and delicious cookies made with the best flour; KING ARTHUR! Just love how your cookies turned out identical to their recipe…noticed how you changed from the shortening to corn oil, which sounds unusual, and different to me, but it obviously worked. Also the addition to the vinegar…wonder what that is all about?

    Learn something new every day! Love it, and will try the recipe out. Beautiful photos, as well.
    BTW-I hope you don’t mind that I will also take the converter, which is so handy to convert the American measurement and vica-versa!
