Pasta with Shrimps


Today I am at home. We have a big strike because of the measures that government has taken, so as to recover from the economic crisis we are facing. So, there are no buses, trains, no public sector, etc. Also the lady who is watching my child every day cannot come here. My mother, who in another instance would baby-sit him, went to Cyprus for vacations and this means that I am totally alone. So, I took the day off and I am sitting home for today. This is good because I can cook properly and write about it in no hurry. During weekend I wanted to do something that wouldn’t involve meat. Shrimps are our favorite and this recipe of Pioneer Woman’s is excellent, since I have made it many times with great success. I have made some changes to the original recipe towards a healthier version, since we are city people with so less exercise in our lives than ranchers. If you want the original recipe you can always visit her blog. Nevertheless, I believe that even the lighter version is as tasty.

Pasta with Shrimps

Ingredients
500 gr. shrimps (I used frozen, thawed, but feel free to use fresh it will taste even better, just peel them and devein them)
500 gr. pasta (I used spaghetti, but again no food police here you can use whatever you like)
1 onion, chopped
2 garlic cloves, chopped
6 tbsp olive oil, divided
1 glass of dry white wine
250 gr. tomato sauce
1 cup evaporated milk (the original recipe called for heavy cream, but our cholesterol would go to the roof)
Fresh parsley, chopped finely
½ tsp dried basil
Salt and pepper

Instructions

There are two ways to do that. Either boil the pasta first and place the shrimp sauce on top of every plate, which is exactly what I did, or you do the pasta and sauce at the same time and throw the pasta to the sauce and toss to incorporate. Either way is fine. I chose the first because I wanted the leftover pasta to be plain just in case anyone wanted it that way for dinner.
So, boil pasta according to instructions and set aside.
To make the sauce, in a skillet add 3 tbsp of olive oil in medium-high heat. Add the shrimps and cook for couple of minutes. Take them out of the skillet. Discard the oil and add another 3 tbsp of olive oil. Place them at the same fire and put the onion and garlic. Sauté until they become soft. Add the wine. Sauté for another 3 minutes. Add the tomato sauce and lower heat to medium-low. Let it boil for 10 to 15 minutes. Add the evaporated milk and let cook for 5 minutes again. Then add the herbs, salt and pepper and the shrimps. Cook for couple of minutes and it is ready. If the sauce is a little bit runny you can always do the same old trick. Just thicken it with corn flour dissolved in water(portions should be equal, for example 1tbsp corn flour 1 tbsp water).

  • 500 γρ. ζυμαρικά
  • 500 γρ γαρίδες ή φρέσκες ή κατεψυγμένες ξεπαγωμένες
  • 1 κρεμμύδι, ψιλοκομμένο
  • 2 σκελίδες σκόρδο, ψιλοκομμένες
  • 6 κ.σ. ελαιόλαδο
  • 1 φλ. λευκό ξηρό κρασί
  • 250 γρ. σάλτσα ντομάτας
  • 1 φλιτζάνι γάλα εβαπορέ (η αυθεντική συνταγή λέει κρέμα γάλακτος, αλλά εγώ προτιμώ το εβαπορέ)
  • Φρέσκο μαϊντανό, ψιλοκομμένο
  • 10 φύλλα φρέσκου βασιλικού
  • Αλάτι και πιπέρι
Instructions/ Εκτέλεση
  1. Υπάρχουν δύο τρόποι να το κάνουμε αυτό.
  2. Είτε βράζουμε πρώτα τα ζυμαρικά και τοποθετούμε τις γαρίδες με σάλτσα πάνω από κάθε πιάτο, που είναι ακριβώς αυτό που έκανα, ή κάνουμε τα ζυμαρικά και τη σάλτσα την ίδια στιγμή και ρίχνουμε τα ζυμαρικά στη σάλτσα και ανακατεύουμε να ενσωματωθούν.
  3. Είτε έτσι είτε αλλιώς, είναι μια χαρά.
  4. Επέλεξα το πρώτο γιατί ήθελα τα υπόλοιπα ζυμαρικά να τα χρησιμοποιήσω κάπου αλλού.
  5. Βράζουμε τα ζυμαρικά σύμφωνα με τις οδηγίες και τα ζεματίζουμε με βούτυρο.
  6. Για να κάνουμε τη σάλτσα, σε ένα τηγάνι προσθέτουμε 3 κουταλιές της σούπας ελαιόλαδο σε μέτρια-υψηλή θερμοκρασία.
  7. Προσθέτουμε τις γαρίδες και σοτάρουμε για μερικά λεπτά.
  8. Βγάζουμε από το τηγάνι.
  9. Πετάμε το λάδι και προσθέτουμε άλλες 3 κουταλιές της σούπας ελαιόλαδο.
  10. Τοποθετούμε στην ίδια φωτιά και σοτάρουμε μέχρι να μαλακώσουν το κρεμμύδι και το σκόρδο.
  11. Σβήνουμε με το κρασί.
  12. Σοτάρουμε για άλλα 3 λεπτά.
  13. Προσθέτουμε τη σάλτσα ντομάτας και χαμηλώνουμε τη φωτιά στο μέτριο-χαμηλό.
  14. Αφήνουμε να βράσουν για 10 έως 15 λεπτά.
  15. Προσθέτουμε το γάλα εβαπορέ και μαγειρεύουμε για άλλα 5 λεπτά.
  16. Στη συνέχεια, προσθέτουμε τα μυρωδικά, αλάτι και πιπέρι και τις γαρίδες.
  17. Μαγειρεύουμε για δύο λεπτά και είναι έτοιμο.
  18. Αν η σάλτσα είναι λίγο αραιή μπορείτε να προσθέσετε κορν φλάουρ διαλυμένο σε νερό, για παράδειγμα 1 κ.σ. κορν φλάουρ 1 κ.σ. νερό.

    Wonderful looking pasta. Thanks for sharing with Presto Pasta Nights. As for the strike, hopefully life will get back to normal soon. In the meantime, enjoy your little one and the opportunity to cook more leisurely.

    This looks really delicious. My daughter loves shrimp and is always asking me to make it. But I am not a huge shrimp lover. So never really know how to prepare it. This seems pretty simple. Thanks! My daughter will be pleased:)
