Spaghetti Bolognese

 To be honest with you, I feel a little embarassed posting this recipe. The reason is that, this is a very easy meal for me and a comfort food for my family. I believe all families have meals like that and all of you have meals that are easy and comforting. The only reason I am giving you this recipe is to perhaps give you another perspective of an old and tried recipe. Anyway, I know I still owe you the recipes of the food we made on Clean Monday, but it is so hard for me to interview my own mother these days. I promise you though, I will try and do it in the following days.

Spaghetti Bolognese

Ingredients
500 gr. / 1 lb spaghetti
500 gr. / 1 lb ground beef
300 gr. / 10 oz. finely chopped tomatoes(I used canned)
1 onion, finely chopped
3 tbsp olive oil
1/2 cup white wine
200 gr. / 7 oz. mushrooms, sliced
2 tsp salt
1/2 tsp cinnamon
1/2 tsp ground nutmeg
3 bay leaves
1 tbsp sugar

Instructions

Boil pasta according to instructions.
In a skillet put the 3 tbsp of olive oil in medium/high heat and saute the onion for couple of minutes.
Add the ground beef and saute for 3 minutes.
Pour the wine and throw the mushrooms and continue to saute until almost all wine is absorbed.
Next add the chopped tomatoes, salt, cinnamon, ground nutmeg, sugar and bay leaves.
Lower heat to low and simmer for 40 minutes.
When it’s ready serve on top of pasta with parmigiano or any other cheese you like.

Μακαρόνια με Κιμά

  • 500 γρ. σπαγέτι
  • 500 γρ. μοσχαρίσιο κιμά
  • 300 γρ. κονκασέ ή φρέσκια ντομάτα σε κομματάκια
  • 1 κρεμμύδι, ψιλοκομμένο
  • 3 κ.σ. ελαιόλαδο
  • ½ γλ. λευκό κρασί
  • 200 γρ. μανιτάρια σε φέτες
  • Αλάτι, πιπέρι
  • ½ κ.γ.καννέλα
  • ½ κ.γ. μοσχοκάρυδο τριμμένο
  • 3 φύλλα δάφνης
  • 1 κ.σ. ζάχαρη
Instructions/ Εκτέλεση
  1. Βράστε τα μακαρόνια σύμφωνα με τις προτιμήσεις σας.
  2. Σε μία κατσαρόλα προσθέστε το ελαιόλαδο και σωτάρετε το κρεμμύδι σε μέτρια/δυνατή φωτιά για δύο λεπτά περίπου.
  3. Προσθέστε τον κιμά και σωτάρετε για ακόμη τρία λεπτά.
  4. Ρίξτε το κρασί και τα μανιτάρια και σωτάρετε μέχρι να απορροφηθεί σχεδόν όλο το κρασί.
  5. Προσθέστε τις ντομάτες, αλάτι, πιπέρι, καννέλα, μοσχοκάρυδο, ζάχαρη και τα φύλλα δάφνης.
  6. Χαμηλώστε τη φωτιά στο χαμηλό και βράστε για 40 λεπτά.
  7. Όταν είναι έτοιμος σερβίρετε πάνω από τα μακαρόνια προσθέτοντας και τυρί τριμμένο.

  1. I have never heard of adding cinnamon and nutmeg to a pasta sauce (except nutmeg is generally added to lasagna, I guess…)! This sounds wonderful. I have a wonderful German friend whose father used to make the most amazing Bolognese sauce. I wonder if this is the secret! :-)

  3. Very nice! I’m a vegetarian, but I occasionally buy meatless crumbles to make spaghetti bolognese. It definitely is a comfort food at my house too!

    Your recipes are always wonderful and different. I recognized this ingredient list until I reached the cinnamon, nutmeg and sugar. Those tweaks are totally new to me in a spaghetti sauce. Sounds delicious!

  7. I love spaghetti Bolognese in any format and your version sounds wonderful! I love the addition of the cinnamon and nutmeg to the meat sauce, my Dutch husband often adds nutmeg to meatballs and they are so good!

    I love the spices you’ve used in your sauce. The cinnamon especially give it a nice flavor that’s not too sweet.
